I "treated " myself to two Shun "high end" Premier chef and santoku knives. Within two months both had severe chips on the edge. No abuse. No bone chopping. No kids. So I explored and researched and stumbled upon Enoking Gyuto chef knife. I'm satisfied and impressed. Wicked sharp the entire lenghth of the blade. It handles nicely. The handle is very comfortable for me(large sausage fingered paws). Is the construction perfect? Not quite but damn close. There is a very slight, small bend in the tang just outside the handle. My blacksmith friend spotted it. Very few people have the eye to discern this tiny flaw. I probably would never have noticed it. Comes with an impressive wooden presentation box and very nice protective wooden sheath. Buy with confidence. This is a rare value for your $$. ... show more

I like the feel of it. Holds edge well. Haven't used knife on any Japanese vegetables yet,but cuts my American ones just fine! I would recommend cleaning and drying after use. Noticed slight build up of rust starting when left over night on upper edge.

For my personal knives I like to have the handle closer to the blade for more control when I'm cutting, but with this one it's a little more spacey than I like, when I hold it the blade kinda flops around and the sharp edge hurts my fingers after a short time.
