If you’re looking for the ultimate fillet knife, stop searching. The Dexter Outdoors SOFGRIP Fillet Knife is the best fillet knife on the planet, period. I fillet a ton of Red Snapper, and this knife makes the process quick & clean. Perfect Flex: The blade has just the right amount of flex to glide through the fish with precision. Stays razor-sharp, even after processing Snapper (I cut under the scales not through them, It's a knife not a saw). I can fly through it & even cut out the collars (arguably the best part of the fish) with ease. Don’t waste your money on overpriced, high-end fillet knives (unless that’s your thing).
