  • Chef Tested Through 200 Pounds of St. Patrick's Day Corned Beef Brisket
This CVLIFE Fillet Knife with Leather Sheath made a tough week much easier. I run an Irish pub kitchen and am in the midst of prepping for St. Patrick's Day, which means cooking and processing 200 pounds of corned beef brisket. I prefer a fillet knife for removing all the surface fat from the whole, cooked brisket before switching to a heftier cimeter or carving knife for slicing. This knife allowed me to do it all with surgical precision and no fatigue without switching to a larger knife. Its contoured pakkawood handle looks beautiful and feels great in the hand, while the razor-sharp 10Cr15MoV steel blade facilitates both paper-thin slicing and the breaking down of larger cuts. Function: My previous fillet knives have been budget blades which perform well, but quickly show their limitations under heavy use. Both my standard sportsman’s Finnish knife and Swiss-inspired, nylon-handled fillet knives have provided years of use, but their blades are very narrow, lose their edge quickly, and wear down noticeably after repeated sharpening. This CVLIFE fillet knife has a beefier blade, but it’s still very thin and flexible. Its profile looks and feels much more professional, and I'm able to choke up on top of the blade as I would on a standard chef’s knife, offering more control and stability than a “golf-grip.” The bolster between the underside of the handle and blade protects your hand from slipping onto the sharp edge, and stays comfortable after hours of use. The handle is very ergonomic, and its robust diameter and tapers allow for a firm grip with perfect balance for dainty cuts. On a whole corned beef brisket, this knife glides effortlessly between the fat and the muscle. The blade’s flex allows for complete fat removal while preserving the tender meat underneath. After separating the “point” from the “flat,” I cut these into smaller sections for slicing without needing my usual knife switch. The blade is sturdy enough to section the one-inch-thick flats with enough dexterity to finely slice the fattier points. I am even able to achieve wafer-thin slices from this very tender, heavily-marbled cut, which many knives would turn into mush. I imagine slicing fish and other meats would yield similar fantastic results, but I would avoid cutting into bone as this could damage the blade’s edge. After each use, I clean this in a commercial three-sink system with detergent and bleach sanitizer, and store it in the included leather sheath. The sheath is genuine leather, though the animal isn’t specified, and it has some rigidity for protection. After a week of heavy use the blade and handle have held up beautifully, and I haven't needed to sharpen it once through my entire 200-pound ordeal. I was also using nylon cutting boards, which normally wreak havoc on knife edges. Verdict: As a professional chef, I can confirm that this fillet knife yields professional results under the stress of a commercial kitchen. Though I’ve only used it for a week, it’s our busiest week, and I subjected it to four times my usual workload in the same time frame. Based on this short-term (but exhaustive) testing, I’m convinced this will have similar longevity to our other quality commercial knives. If you’re on a budget, this offers a ton of value for professionals, outdoors-people, and home cooks. It looks and feels great, and it’s capable of fillet knife precision without sacrificing durability or effectiveness in tackling larger cuts, making it unique amongst the previous fillet knives I have owned. Pros: • Professional look, feel, and performance. • Perfectly balanced with a comfortable, refined, ergonomic wooden handle. • Facilitates both razor-sharp slicing of smaller cuts and quick butchering of subprimals. Cons: • Tried to find one, but none so far. ... show more

  • Product to be as advertised
Knife and sheath are nice and good looking, but knife is not very sharp. Not razor sharp as shown in ad. Spent time sharpening but lost edge after only filleting about 6 fish.

  • Gorgeous filet knife
If you are not familiar with Amazon Vine, it is basically Amazon trading free* products for honest reviews. You see a lot of Vine reviews that are cookie cutter and based on templates. I aim to make my reviews honest and non-cookie cutter (other than this intro and disclaimer). * These items are not actually free as Vine members pay income tax on the items they receive. Therefore, I will never order something from Vine unless I actually intend to use it. I think this is important for readers to understand because it means I will never order an item just to provide a fake five star review to a company. If I review something as good, it means I actually enjoyed using it or it fills its intended purpose correctly. Items that don't meet my expectations will be reviewed accordingly. Why I ordered this item: I do a lot of fish prep work and my old fillet knife had gotten pretty dull. I wanted something that would handle the repetitive work of breaking down whole fish without wearing out my hand. Likes: * The blade is sharp out of the box. I tested it on a few mackerel I had in the freezer and it cut through the skin and along the bones with almost no resistance. The cuts were clean and I wasn't tearing the flesh like I was with my old knife. * Build quality is exceptional. The handle is good wood composite that feels substantial and has good texture even when my hands are wet. The blade itself has weight to it without being heavy, which makes the work easier. * The flexibility of the blade is noticeable. When I'm working along the spine of a fish, the blade flexes enough to follow the bone contours but doesn't flop around. I was able to get more meat off the bone than I typically do. * For the price, this represents very good value. I've seen comparable knives go for nearly twice what this costs, and the 10Cr15Mov steel is a good choice for a fillet blade. * The leather sheath is well made and the snap closure stays closed. My old knife's sheath fell apart after a couple years, so this is refreshing. No likes: * None Would I pay full price for this product: Yes Final thoughts: This knife seems almost too good to be true. I love this thing! ... show more
