Popovers super easy to make, and this popover rack is a very nice one. Well made and sturdy. Everything is one piece - the popover cups permanently affixed to the rack. For newbies it would be nice if it came with a cookie sheet but it does not, so be aware you’ll need a cookie sheet large enough so that the popover rack can stand inside it. This makes it easy to take the popover rack in and out of the oven and to clean up if any batter drips, etc. The key to making great popovers is having a rack like this one AND having the right recipe that makes the perfect amount for this Popover Rack. This recipe is what worked perfectly for me, makes exactly the right amount of big fluffy popovers every time: Preheat oven to 440 Fahrenheit. Line a cookie sheet with tin foil (I already had a cookie sheet that was the perfect size) and place the empty popover rack on the tin-foil-lined cookie sheet. THEN PUT THE EMPTY POPOVER RACK ON THE COOKIE SHEET IN the oven so the popover rack is heating up while you prep the popover batter. This pre-heart step is key. Prep the batter by hand: Whisk 3 ROOM TEMP eggs. Whisk in 1.5 cups ROOM TEMP whole milk (I use goat milk). Then whisk in 1.5 cups all purpose flour. Then whisk in about 1.25 teaspoons sea salt. You want to see some air bubbles and have a batter that’s about like a pancake batter. That’s it. That’s the batter. Super easy. Key here is to make sure eggs and milk at room temp. Before you start prepping the batter, putting the eggs and milk on the sink (out of the sun) for about 10 minutes is long enough to bring them to room temp. Once you’re done prepping the batter, carefully take the cookie sheet with the popover rack out of the 440 degree oven. CAREFUL IT IS HOT! Don’t touch anything hot :). Without touching the popover rack, give each popover cup a quick spray of cooking spray (can use Pam (I use a healthy avocado oil cooking spray). Then carefully using a soup ladle, ladle the batter into each popover cup - ONLY FILL THE POPOVER CUP 3/4 full! The batter you made will be exactly enough to fill each popover cup on this rack 3/4 full. REMEMBER THE RACK & COOKIE SHEET ARE SUPER HOT, so use your oven mitts to get the cookie sheet with the popover rack back into the 440 degree oven. Once those popovers are in that oven DO NOT OPEN THE OVEN AGAIN UNTIL THEY ARE DONE, or you won’t get maximum puffiness. Bake at 440 degrees for 20 minutes. WITHOUT OPENING THE OVEN, reduce temp to 350 degrees and bake another 20 minutes at 350 degrees. Remove the cookie sheet and popover rack from the oven, and using tongs gently pull each popover out of their cup and put them on a baking rack to cool. They will just slide out! Wait a few minutes and be careful of steam releasing from the popovers when you eat them! If you have any left over, store in fridge. They can be reheated wrapped in damp paper towel in microwave for about 20 seconds. That’s it. Super easy, and once popover rack is cooled down, clean up is a breeze - don’t use anything scratchy to clean it, just a soft sponge and warm soap water! Bon Appetite! I like it but it was not as advertised. This purchase involved a wild ride that, to its credit, Amazon settled to my complete satisfaction. Based on the Amazon description, this was supposed to be a Chicago Metallic popover pan with a Silverstone (a proprietary product of DuPont, I believe) non-stick coating that presumably justified its $56 price. After many, many hours on the web and the phone, I believe the following to be true: 1. There two or more companies that use the name "Chicago Metallic," "Bundy Chicago Metallic," "Chicago Metallic Gourmetware," and perhaps a few more variations and combinations of similar-sounding names. My pea-brain boggles! 2. According to Customer Service at Chicago Metallic (at the address on the packaging) the manufacturer of this product does not and never has used a Silverstone-brand of non-stick coating. 3. The packaging identifies this item as a Chicago-Metallic six-cup popover pan Model number 26562 which sports a non-stick coating of some sort, but which apparently bears no relation to "Silverstone." While this pan may have good non-stick characteristics in its own right, evidently it isn't what was claimed. Certainly it isn't what was implied in the description. 4. This exact item is available for approximately $17 not only all over the web, but also in other places within the Amazon website itself. In other words, I could find no justification whatsoever for the $56 price, other than it seems to be a rather deceptive marketing ploy. 5. Amazon offered me a full refund, but I refused saying that I would keep the item if they would only credit my account with the DIFFERENCE between the $56 price and about the realistic $17 widely-available price. This was accomplished and I am satisfied. I could be wrong, but these are my conclusions of several hours of research and phone calls to the best if my ability over two days. Why did I pay $56 for a $17 item? Because I thought I was going to get a product with a special "Silverstone" brand non-stick coating. I don't know what my item is actually coated with, but it has been very good so far. Non-stick is especially valuable in a popover pan. I have used mine three times now with excellent results. I coat the cups thoroughly with non-stick SPRAY or a stick of butter, pre-heat the pan (according to several recipes) prior to adding the batter) and otherwise follow one of the many online-recipes to the letter as to time and temperature. Not a single instance of sticking in three tries so far. I hand-wash the pan and dry it thoroughly prior to putting it away. So far not a hint of rust. Sorry to run on so long, but I hope this helps someone. What I believe I learned is that Amazon frequently offers exactly the same item at different prices, and the descriptions by the manufacturers and/or sellers are not always accurate -- to say the very least. I would like to see Amazon make better use of model numbers or other identifying information to avoid confusion. I try to buy quality bake-ware so I am not re-buying it again and again when it warps or rusts. I first found Chicago Metallic on King Arthur's Baker's Catalog and knew I was holding quality. I am in the food service business and buy professional equipment whenever feasible and that's exactly what Chicago Metallic feels like to me. As a matter of fact, some of their pans are stronger than ones I've purchased from the restaurant supply house. The 6 Cup Popover Pan is consistent with their high quality, is non stick and the perfect size. The wells heat quickly and since you have to pre heat empty, they are heavy enough to avoid warping. I don't use a mix, it's super easy to mix up your own and have the best, eggy, crusty popovers you've ever tasted. 2 TBS tablespoons unsalted butter, melted 1 3/4 cups flour 1 teaspoon kosher salt 4 extra-large eggs, at room temperature 1 3/4 cups milk, at room temperature 1 tsp flavoring (optional but I use a buttery sweet dough flavor from King Arthur when I make for breakfast) additional 2-3 tbs melted butter to grease pans mix all the ingredients, wet first then add dry. You should have a thin batter. Grease pans then put empty pans in a preheated, 425 degree oven for about 2-3 minutes. While the pans are still in the oven (you can slide out) fill each cup a little over half full. Bake for 30 minutes and enjoy. These pans are non stick but you need the butter as an aid to lift the batter up the sides of the pan. Too little butter will result in flat popovers. More is better than less, be generous. ... show more

This is a review for Chicago Metallic Non Stick 6-Cup Popover Pan by Chicago Metallic. Popovers are easy peasy to make, right? But the perfect popover can remain elusive if you don't have the right pan. I could not find this particular popover pan in stock within a 50 mile radius so...Amazon! Why don't I just check Amazon first instead of driving around and being disappointed? Anyway, you'll get great results using this popover pan. I coat the cups with butter because we like the light crispy texture it lends to the popover base. For some reason the popovers come out much taller with this pan than with other pans and I haven't had a dud yet. Lovely, perfect popovers every time. For fun, here's an Alton Brown popover recipe that we enjoy: INGREDIENTS 1 tablespoon unsalted butter, melted and cooled, plus 1 teaspoon for the pan 4-3/4 ounces all-purpose flour 1-1/2 teaspoons kosher salt 2 large eggs, at room temperature 1 cup whole milk, at room temperature DIRECTIONS Heat the oven to 400 degrees F. Grease a 6-cup popover pan with the 1 teaspoon of butter. Combine the 1 tablespoon of butter, the flour, salt, eggs and milk in a blender or food processor and process for 30 seconds. Divide the batter evenly among the cups of the popover pan, filling each one-third to one-half full. Bake on the middle rack of the oven for 40 minutes, taking care not to open the oven door.
