I wanted a square chef's knife as I crush garlic using the flat of the knife pretty much each night preparing dinner. Originally I purchased Chris Kimball's Henkels Nakiri knife. I returned that knife as the build quality was only mediocre. I picked this knife as this was the least expensive Nakiri knife with VG-10 steel that I could find on Amazon. I'm pretty sure it's not true Japanese VG-10, but rather the Chinese equivalent, I don't think that matters to the functionality of the knife. I'm satisfied with this knife. The cutting edge out of the box was extremely sharp. It's so sharp, that I can feel the blade digging into cutting board when I scoop up chopped up food using flat of the blade. The build quality is quite good. No rust on the cutting edge after weeks of hand-washing. Some small negatives: 1) The logo on the blade seems to be painted on. That paint is starting to come off after the nightly washing. It's not a big deal as that portion of the blade doesn't touch food. 2) The fit between the steel bolster and the G-10 handle material isn't quite perfect. When you run your finger along the transition, you can slightly feel it. Not a big deal. 3) The handle of the blade is cylindrical in shape, I would prefer something less round so less chance of the handle rotating if my hand is slippery. ... show more
