I bought this little machine two years ago when my bread machine died and I realized I only used it for mixing and proofing dough anyways. It has a much larger capacity than a standard bread machine, the paddle is larger, and the proofing temp is lower, so you don't end up with partially cooked or dried pieces. I just throw the ingredients inside in any order and hit mix and come back in a few to find a lovely dough ball. Some of the things I love about this machine are: * It's easy to pull in and out of the cabinet (I store the mixing bowl and base separately). * It's easy to wash * It's easy to pause and add something you forgot * Compared to a bread machine and its settings, it's easy to change the times, start over, etc. * because it stirs from the bottom, no crumbs are left behind * the capacity seems just right for most home baking projects Here are the things I don't like: * the mix cycle is loud and annoying (although we are all used to it by now) Because it's so easy to use and clean, I found myself using it for non-bread projects, too, like mixing pasta dough or brownie mixes. Today, I was cleaning my kitchen and realized my KitchenAid mixer, which I used to use all the time (I have the Professional model) was covered in dust. I had to admit to myself that I just don't use it anymore because I'm always pulling out this little machine instead.   • This Is Great For Breadmakers, And It Becomes Easier to Use After the First Few Loaves.

This is a great dough maker. I use it for most of my breads. I like being able to monitor the process and results as it does its work, and adding a bit of flour or water as needed. It is best to do it near the start of the kneading though. And it does not handle having liquid added past that point, so you do have to pay attention to watch it closely early in the kneading process. ... show more

EXCELLENT ..... does a NICE JOB Mixing and Kneading for a 55+oz. Ball of Dough ... HOWEVER, I found out the HARD WAY that IF making a large amount of dough, you DEFINITELY want to 'Strap It Down' (as pictured) as it'll get 'TOP HEAVY' and wants to tip-over and fall off my 'Bread Cart' (this is why it only got 4 stars - I'm sure the other brands will do the same thing as well) .... I'm NOT able to use the suction-cups to stick it to the Bread Cart's Top !!! 🙄 🤔 OTHER THAN THAT ....... THIS THING WORKS GREAT ..... and I don't have to stand around in the kitchen !!! 😏😁 My mix time is 20 Minutes, and the 'Rise Time' (Ferment) is 50 Minutes .....   • Makes a perfect ball of dough!

Took the mixer straight out of the box, gave her a wash, and tried her out. I think it did very well. It never sounded like it was struggling, and it mixed a soft ball of dough. My normal recipe and measurements worked nearly perfect. It only needed a slight dusting of flour more than I usually use, and it pulled away from the sides exactly how it should. I'll definitely update this review if I feel the machine doesn't hold up after a few handful of uses. So far I'm very pleased with it. It definitely beats pulling my Kitchenaid, and nearly my back, out of the cabinet. . ... show more

I waited for this thing to be delivered for almost 2 months; it was worth the wait. This dough mixer / fermentor replaces a 30 year old bread machine that weighs a ton and was never really used to bake bread. This machine is much lighter and was easy for me (67 years old) to lift. I like that the whole interior is metal and not plastic or covered in " nonstick coating or 'ceramic' ". That was one of the primary selling points. I like that I can see the whole goop transform to dough thing though the plastic top. I want to note that I use a Wilton nylon icing / pastry paddle to scrape the sides of the metal container when the metal paddle is at rest (during the 15 minute cycle - it pauses occasionally). This technique ensures that all of the flour is combined. It was very easy to add more flour - it was humid today so the dough was a little sticky. I like the little suction cup feet on the bottom of the machine and that the whole process of making our first pizza dough with it took all of 15 minutes. (Approximately 3 cups of "00" flour.) The bowl and paddle were very simple to rinse off and wipe out with a paper towel as there was very little dough left behind. I cleaned everything up while I waited for my dough to proof in the oven over a pan of hot water. (I roll out my dough at the end of the dough cycle, cover with olive oil and toppings and put it in the oven to rise over a pan of hot water. It's a super quick no fuss rise and no one can tell the difference.) Very happy with my purchase. I want to try the recipe for steamed buns that came with the machine once the weather gets cooler. ... show more

  • Already stopped working after 2 months. Don't waste your money

Review from spouse. DON'T WASTE YOUR MONEY! I do a loaf of homemade bread a week. 400 gms of flour. We are not talking about putting this through a tough schedule. After 2 months, I went to use it today, and it won't heat up to do the fermentation. It still does knead the bread, but the fermentation feature was the part I loved best. I have made about 10 loafs of bread since I got it. None of the "helpful" hints for getting it to work were of help. I don't leave it plugged in, so a power surge was not an issue. So, I will continue to use it to knead the bread right now, until I can afford a different brand and model. I don't recommend this at all. ... show more
