The adage "you get what you pay for" usually rings true. All-Clad is in a class of its own and generally stands well ahead of the competition in cookware. The handles of these are noticeably more weighty than on my Tramontina Professional knives. I love love love love love my Tramontina knives - they're sharp and they stay sharp and for the price, they're basically free. I've owned them for years and have nothing but praise for them. The All-Clad knives feel nicer in the hand, and the weight is very well balanced. They arrive ridiculously sharp. Even with the steak knife, I was able to "carve" a piece of paper. I was really happy with each knife as I unboxed it until I got to the chef's knife. The chef's knife is made of the same materials and has the same nice heft to it, but there is a defect on the blade. At the base, there's a part that's lifted and turns in the wrong direction. For such an expensive knife, it's a huge disappointment. Also disappointing - the block is not varnished. The wood has been stained, but the stain provides no protection to the wood of the block. When I cook, I COOK and can make a mess. If I accidentally splatter the block with pasta sauce, it's not a simple "wipe it off" cleanup. Even if wiped up immediately, some of the sauce is going seep into the still very porous wood surface. Less disappointing - the scissors. The handles feel cheap compared to the handles of the knives, but there's one feature that really stands out for me. Usually on scissors that you can separate for easy cleaning, they eventually will become loose and not be able to cut any longer. These scissors have an adjustable bolt so that you can tighten them if needed - theoretically extending their life to as long as the handles remain intact. Sadly, I don't expect the rubberized and lightweight handles to last as long as the blades. Maybe I'm being pessimistic, but they don't feel like high end kitchen shears. Only time will tell how well these knives behave over the course of years. I'll update this review periodically with their performance. UPDATE: 11.5.2023 After living with these knives and using them daily for a couple of weeks, my initial disappointment has softened a bit. The performance of these knives is incredible, even the one with the defective blade. The small serrated knife in particular cuts through chicken like butter. I can get paper thin slices of onions and tomatoes with the santoku and chef's knife. Even for chopping up fresh herbs, they perform wonderfully. The honing steel does a great job of keeping the knives sharp. They perform well. Still wish the block was varnished. But they do outperform my other knives. ... show more

I am usually not one to buy a knife set as I have always felt that buying nice individual knives is a much better, cheaper way to go. I already have some really good knives from Shun, Henckel, Cangshan, etc. More recently I had the pleasure to try the all new All-Clad paring knife and was very impressed with it! The knife feels really good in my hand and is extremely sharp! We all know that All-Clad makes great cookware, but knives!? Anyway, when I saw this block set I was intrigued as to how the other knives might perform. What I like about this block set that makes it worth checking out is that it is pretty minimalistic. Having pretty much only the knives that you will actually use. A chef's knife, santoku, paring, serrated utility, bread and 4 steak knives. Along with a honing steel and a kitchen shears. Now, personally I most likely won't use the shears as I already have a really nice one. I have a nice bread knife also, but this one works well for those that need one. All of the other knives are great! Better than I was expecting! The chef and santoku knives have a 26 degree edge like most German knives but allow for a very nice chefs grip like the Japanese knives do! I also like the weight of the knives. They feel great in my hand! They are also extremely sharp right out of the box! I also like that it includes a honing steel which is a must have! Although it is a little shorter than I'm used to. Steak knives are always good to have, since they are serrated it's only a matter of time before they need to be replaced. These have the same nice hand feel and sharpness as the rest of the knives. I already mentioned the great paring knife and the serrated utility knife is nice to have(although I would have preferred a boning knife instead). My only real complaint is that while they are using German steel, they're made in China. I can't complain about the quality because it truly is great, I'm just never comfortable buying something from China if I don't have to. Overall, if you are looking for an excellent set of very sharp knives that you can store in a (nice acacia)block. You should absolutely check these All-Clads out! ... show more

These are some meaty knives. They feel like they will last for decades. These are a huge upgrade from the farberware knives I currently have. They are sharp and get the job done seamlessly. The wooden block reminds me of a more rustic kitchen setting, which is fine for my purposes.
