Size: ZongChuan 9C Chef Knife
At this price point, do not expect a "true" Damascus hand forged style knife as they are pretty complex and tough to make, and you would not be able to put them in the dishwasher (they tend to etch and rust). That being said, this Chef's Knife has a rather nice Damascus look to the blade and I have had no issues with discoloration, etching, or rust spots, running it through the dishwasher multiple times, using several different detergents. As this is a daily use knife for me, that does go into the dishwasher after use on non-vegetal items (meat), the one piece design with no break at the handle is excellent. As the handle is smooth steel as well, I was a little concerned about it being slippery when used on greasy food, like fat trimming pork, lamb, or chicken, but the contours and shape have helped with the grip and I have had no issues, even slicing up the cooked product for serving. I also really like the forward curving heel as the straight or backwards curving heels tend to hurt my finger, and they do not fit well in a blade guard. The blade has been holding its edge rather well under daily use, so I have not put it to a sharpening stone yet. One other thing I really like about this knife is it is not as light as other inexpensive knives, and has some nice heft to it. As I am a home cook, I prefer a heftier knife as it gives me better feedback and control of it. Even if this was not a Damascus style blade, I would be definitely recommending this knife as a daily driver, especially if you have older kids still learning to cook and don't want them using your really expensive knives, like I do.

Visually impressive and very functional! The knife arrived sharp and ready to use. It has been cutting nicely and holding up well through general kitchen use. Hand-feel is nice and the grip is well-shaped. I've had this for several weeks and haven't noticed any discoloration/rusting or quality issues, but I do hand-wash it so I can't speak for dishwasher durability. Overall a nice knife for the price point, which is just under $20 USD at the time of this review.

Let's face it. At the low price point these knives area at, there is no way these are true Damascus steel. They are the best fake knives of the style that I've seen, so that's a good thing. the knives arrived quite sharp and ready to go. They look nice and feel good in the hand. I paired them with a nice magnetic knife block to allow the Damascus "look" show all the time.

Now middle aged, I’m just starting to get to the point where I really want the right tool for the right job in the kitchen. I don’t need super high end items, I just want a steak knife for steaks, and a bread knife for bread. This arrived in lovely packaging, and would be perfect for gifting – either as a housewarming gift or an affordable option for a young adult’s first apartment. I use this mainly for sandwiches, but sometimes for bakery bread and bagels. What a difference. There are still some crumbs when cutting toasted bread, but I don’t think there’s any way around that. It slices through easily, leaving a perfect cut edge without crushing the bread. I have issues with both my wrists, and so can’t handle a lot of weight. This knife is light and easy for me to manipulate around food. Maintenance is also very hassle free, I’m either scrubbing it down in the sink or dropping into the dishwasher, and I’ve had no issues with rust or staining. The design is simple, and I’m storing it on a magnetic wood block on my counter. Very pleased.

I like this knife. I think it looks fantastic, with the folds of the Damascus steel and beautiful shape. I find it comfortable to hold and use, even with larger hands. It has been holding its sharp edge well through a couple weeks of use. I find that its size and shape makes it very versatile in the kitchen.
