  • Keeps knives sharp!!!
For the past 20 years, I have only been using this knife sharpener to maintain a sharp edge on our Zwilling J.A. Henckels, non serrated, knives. A few quick pull strokes along the entire length of the blade and the knives are perfect again. We just purchased this sharpener, along with an 8" Henckels knife, for our grown up son.   • Acceptable honing device - not a sharpener!
You can see from the other reviewers mixed reviews of this device. This is a very good honing device. Not a sharpening tool. "What's the difference?" you ask? Honing: When a sharp blade is used, the sharp edge tends to bend over and no longer stand straight out at the edge of the blade. This makes the knife seem dull and not cut well. Honing the blade uses a device to make this edge "stand up" and the blade to cut much better. Most professional chefs will hone their knife blades before each use, and often periodically while working. Sharpening: This is a process where actual metal material is removed from the knife, creating a new cutting surface. Sharpening can also change the angle of the blade, providing a sharper or more durable edge depending on the application needs. Knives should be sharpened when necessary - for kitchen knives used in my home kitchen, I have found that this is necessary no more often than every 6 months to 1 year for my most-used knives, up to every few years for the less-used ones. I usually use a honing steel like this: Zwilling J.A. Henckels Twin Pro S 12-Inch Honing Steel for my knives in the kitchen, but that is preference. This "Twinsharp Knife Sharpener" is much easier to use, especially for the novice user, and removes the possibility of issues or damage caused by improper use of a honing steel because this device keeps the knife at the proper angle at all times. As with all devices, your mileage may vary, but for chefs and would-be-chefs who are not comfortable or trained in how to use a regular honing steel, this item may be just the ticket. ... show more

The wife bought and used this product for years in the kitchen, worked "like a charm" ... After about 15 years of use, it started to "wear out" ...   • This is it!
After having huge disappointments at previous two similar purchase, I decided to return to my basic strategy. I tried this which I bought over 30 years ago and loved. It works as well as 30 years ago. This doesn’t look fancy but legitimate doing its job perfectly. My knives cut well again!

  • Handheld knife sharpener
Ingenious design allows you to sharpen knives as you need them and to keep the thing where you need it, right in the knife drawer. My other, an electrical knife sharpner is very cumbersome and heavy and requires some setting up. Because it was so involved I always felt i'd better use the opportunity before I put it away to sharpen all the knives in my house. This would slow my progress down immensely as all I really wanted in the first place was to sharpen a particular knife. Then, later by the time I actually needed one of the many pre-sharpened knive in 6 months or so,all my work was for nought because too much time passed: those knifes where no longer sharp. It does a very good job if what you forsee is you cutting a tomato for a special dinner and recognizing the knife is too dull. It's easy, just sharpen that knife, put the handheld back in the drawer and go about your business. Simplicity! It is a good product that does the job well. As for keeping all your knives at your best, it would be important to have a more sophisticated system such as my electrical sharpener, but this handheld works great for those times you need to sharpen a knife or two without turning that into your main activity while your food begins to wilt from loneliness on the counter. ... show more
