Stunning knife, great material and feels amazing in hand. I personally think this knife is better than Japanese knives for home cook while cutting steaks and meat. However the packaging doesn't match the photo and is really old looking also the edge has a couple of imperfect spots that needed to be honed out. Can't complain with this price tho. ... show more

I have owned an epicure Cook’s knife for awhile now and it’s my favorite knife. It goes through the toughest veggies like butter. I was so excited to find such a wonderful deal on this block set and decided to purchase. Pros -the natural wood block is heavy and substantial. It has many extra spaces to fill as you build your collection but starts you off with the essentials at a better price. - the knives are just amazing. The handles are smooth and comfortable to hold. Be careful because they are very sharp. Cons - a little sawdust sheds on the knives but I’m expecting this to get better over time. It seems like nothing is made from real whole slabs of wood these days so this might be a pro! - the kitchen shears aren’t the greatest but I didn’t buy the set for the shears so I just kind of see them as a freebie!   • Brilliant Knife
Style: 7-Inch Santoku
German knives are known for their steel and durability. Japanese vegetable knives or cleavers are known for the fine edges, sharpness and detail work, but are usually are the opposite of German knives in weight and durability. If you're not needing to cracking chick bones with the butt of the knife or rocking back and forth dicing herbs you may find that the vegetable cleaver is the perfect all-around knife, I certainly have. I have 5 cleavers in my kitchen but this is my favorite. I get the weight of German steel along with that durability but the ability to detail the work of the vegetable knife. The balance is phenomenal. The edge is more pronounced in its curve allowing you to get a better motion while cutting and you can still work the herbs. The air pockets add a versatility you don't get from a traditional cleaver and keep food from sticking. The cutting edge is 10 degrees so it is incredibly sharp. Though I am no longer in the game I worked as a chef and have the culinary degree to go with it if it adds any weight to your consideration of my thoughts. For the price point I was expecting some sharp, high-quality knives. These were so dull I wondered if they were pre-owned, and quality wise they were on par with the Target store brand. Really disappointed and wish I could return.

I got the Epicure 8" Chef's Knife for my boyfriend for his birthday and he was over the moon. He keeps coming up with new reasons to use it and it has inspired a flurry of cooking in our home. He loves the weight distribution and the ease of use. The handle is so wonderfully smooth, feels great in the hand. So far, it is keeping its blade very well. We previously had a 10" knife, which is just too big for some things, but our 6" knives were not large enough to make quick work of onions or for certain cuts where you want to get the knife rocking. This cuts onions in no time, and is especially fun to use for finely chopping cilantro and parsley. I think it is well worth the expense. My own favorite knife, which is quite a different style, is a 6" Pallares Solsona kitchen utility knife with a carbon steel blade and boxwood handle, made in Spain but now available in the States. We took it to get a new blade edge recently and the guy at the shop promptly bought a set. They are more affordable and make great gifts. ... show more

When I first received the knife it seemed a little shorter than any of my other Santoku knives. It might seem that way, but it's not. Great balance and sharp edge make it a go to knife for meat or veggies. Though I've only had a few weeks now the edge seems to stay right where it should be. If you are looking for nimble, solid, sharp, and envy-inducing knife, this is a great buy - especially at the sale price of $109! This seems like a bit of an experiment for Wusthof as this line of knives eschews many hallmarks of Wusthof’s usual style. No squaring if the handle at any point, no pronounced bolster, a smaller overall profile and weight...I hope this experiment pays off for the longtime knife makers as the blade is extremely hard, easy to sharpen, and offers a new-age take on the classic santoku. I would rate this among the top five santokus mass-produced immediately. It might rise to number one in my opinion when available at sale pricing. This knife is perfect for professional uses but also offers a great look that will avail you pride and compliments as you use it at home. ... show more

This is my first non-Walmart/Target knife and after about 5 months of using it, I can safely say that it is fantastic! It's handled everything from romaine lettuce to chicken bone. The cuts are consistently thin and clean and it's a real joy to cook with it. Only con is how expensive it is. On sheer aesthetics, I, personally, would buy this again. But if I were on a budget, and if the blade is the same on less expensive versions, then that's what matters, and you will definitely not be disappointed in them either. ... show more
