That is important to me. Like any knife the key is going to be how long it stays sharp and how it accepts a new edge. What can be said about this knife that hasn't already? I just wanted to add my voice to the cacophony of approval for this excellent knife. More expensive chef's knives can be had, yes. Higher quality, too. If you really love cooking and you have a bunch of money to spend and you really care about the quality of the steel and the heritage of the design and the exact alloy that went into the blade and the quality of the wood on the full-tang handle, this is probably not the knife for you. If you cook at all, though, and you don't have a bunch of money to spend on a fancy knife, then this is easily your best option. Even if you've never bought a knife outside of a block set before. Even if you don't really like to cook. Especially if you've only bought knives in a set or don't like to cook, even. This knife is so good that you will find yourself wondering why you didn't like chopping before. You will hate cooking away from home because it will mean using a knife that isn't this one. It's that good. I bring it along when I'm going to cook somewhere. Let's talk about the steel. Who cares? If you're buying this knife you probably don't. You don't need to. All you need to know is it comes sharp and it stays that way, and it hones up nicely with a diamond rod. It cleans easily, it doesn't rust, and it's got a nice weight to it. The shape is as it should be. Don't stick it in the dishwasher, although you could probably get away with it a few times. But don't. Let's talk about the handle. It's made of some kind of plastic, but again, who cares? It has a nice texture that keeps it in your hand, the shape is great for prolonged use, and it doesn't leak like some hollow-handled knives do (water can get in and rust your handle from the inside; not here).
