Add one of our most popular vegetable and fruit prep knives to your collection with the Shun Cutlery Classic 6.5" Nakiri Knife. With its straight blade, edge, and spine, this Japanese nakiri vegetable knife is ideal for simple push cuts – making it perfect for everything from stir fry to salads. It's also a great all-purpose chef knife. The end of the blade is blunt so it's extra safe to use. The Classic Nakiri Knife is constructed with Shun's proprietary VG-Max cutting core with 68 layers of stainless Damascus cladding for a strong, corrosion-resistant, stain-resistant, razor-sharp 16-degree edge that glides through food. The D-shaped, ebony-finished Pakkawood handle is durable, beautiful, comfortable for both left- and right- handed users, and doesn't harbor bacteria. Made from VG-10 stainless steel, Shun knives are specially constructed to be harder, less brittle, but also more flexible than traditional steel formulations. The VG-10 core is clad with 16 full layers of SUS410 high-carbon stainless steel on each side, for a total of 33 layers. These layers not only protect the VG-10, they create an exquisitely detailed surface reminiscent of Damascus or pattern- forged steel, the kind once used for Samurai swords. As a result, the knives are simply stunning to look at--much like antique Damascus knives but without their tendency to rust. The 6-1/2-inch blade of this Nakiri knife works great for slicing and dicing, and like many Asian-style knives, its handle is especially suited to smaller users. In contrast to the traditional round profile, however, Shun handles are D-shaped to prevent the knife from twisting in the hand, which provides extra stability and a firm grip. The handle is made from ebony-colored PakkaWood, a fused blend of hardwood veneers imbued with waterproof resin that combines the warmth and traditional look and feel of wood with the strength and durability of plastic. The offset stainless- steel bolster is designed for ergonomic comfort and maximum safety, while a stainless-steel end cap provides the finishing touch. Hand washing the knife is recommended.   • A couple of things

While a wonderful, well balanced, and fit my hand well, knife, I do have a couple of issues. First is that it did not come very sharp at all. Honestly, it was rather dull. That was an easy fix, but I was a bit surprised as Shun has a reputation for hair-splitting sharpness from the factory. Second is that it is made from VG Max steel and not VG 10 as advertised. I love Shun knives I’ve had them for years and my collection keeps growing. They are made different from traditional American/European blades. So they require different handling. Even my chopping board is more suited for these types of knives. Can you keep the razor sharpness? Yes. Can they chip if you use them on hard wood or if you don’t change your cutting style? Yes. Easily my favorite knife, and that’s saying a lot! I’ve been growing my collection of Shun Classics for about four years now. Each definitely serves its purpose. The Nikiri, though ... man, it’s essential. I don’t eat a ton of vegetables, but when slicing, dicing or mincing them, there’s nothing better for the task. The weight and balance are perfect, the blade was super sharp upon delivery and, as it’s straighter than pretty much all the other blades, I’d have to say it’s probably the easiest to sharpen. I’m not an amazing cook and my knife skills are definitely wanting, however, once you learn to slice, rather than chop, these Japanese knives make perfect, precise cuts and actually are a joy to use. Lastly, as with the other Shun Classics, the Damascus cladded blades are eye catching. I have their slim walnut knife block but, as my collection’s recently outgrown it, I always have a knife or two out (... admittedly on display) in my makeshift prep area). I’ve just ordered a magnetic strip to hang the knives I need for the meal I’m prepping. The Nikiri will likely be a permanent fixture there as it’s definitely my favorite to look at! ... show more

First knife of this type I have owned or used and very happy so far. I've only used it a few times but it cuts through veggies (brussel sprouts, ginger) and tofu like, well a hot knife through butter! The finish on the blade is nice and the grain on the wood handle is more apparent in person than in the pictures. You have to get used to a different cutting motion as others here have pointed out.   • Where have you been my whole life?

So, I was a big fan of my 8" Wusthof chef knife. Used it for years. My brother gifted me this Shun Nakiri knife for Christmas and, um, everything changed. Maybe it's me, but this is the best knife I've had the pleasure of using. I treat it with kid gloves (and you better - it will nick you while cleaning if not careful - razor sharp). It cuts through vegetables, meat, bones, joints, and basically anything you need to cut. Chopping is effortless and I actually prefer the square vs. angled tip for rapid chopping and slicing. Breaking down a chicken or an onion or butternut squash - it works, well. It's that sharp. My advice is to get a good wood (bamboo) cutting board so as not to dull the blade, but when you sharpen it (you will eventually need to) make sure you're using a 15 degree cut vs. a 20 degree one. Japanese knives are sharper (and more fragile). I now own 3 (2 at my condo, and one at my vacation cabin). It's the knife you want. Just be careful with it and treat it well and it will treat you well. ... show more
