Description

Restaurants rarely fail all at once. They drift.Service with a Side of Chaos takes readers inside the Pineapple Lounge, a fictional restaurant built from real-world hospitality pressure, where leadership is tested not during calm moments, but when systems strain, guests escalate, and small misses begin to compound. This is not a traditional training manual. Through story-driven scenarios drawn from restaurants, bars, hotels, and casino environments, each chapter places the reader inside high-pressure shifts where timing, judgment, and leadership behavior determine whether a night recovers or unravels. Busy services. Staffing gaps. VIP complications. Quiet mistakes that almost slip by. And the leaders who either catch them early or don’t.Written for servers, managers, chefs, and operators, this book blends narrative storytelling with practical analysis. Each scenario is followed by clear breakdowns that expose what went wrong, what leadership missed, and how chaos can be converted into repeatable habits that strengthen culture instead of exhausting teams.Service with a Side of Chaos is for hospitality professionals who understand that excellence is not declared in meetings or manuals. It is revealed shift by shift, in how teams move, decide, and support one another when the room is full and the margin for error is thin. Read more

  • Highly recommended!
Format: Paperback
My wife gave me a copy of Service with a Side of Chaos after we recently opened our own small cocktail bar. I’m incredibly glad she did. While our concept is very different from the Pineapple Lounge, with its full team of hostesses, servers, bartenders, and kitchen staff, the lessons in this book translate seamlessly to any operation. Whether you’re in food and beverage or running a business in a completely different industry, the principles are universally powerful and immediately actionable. The book reinforces what truly drives success: establishing consistent standards, delivering exceptional service, leading with strong values, performing under pressure, and recognizing and rewarding your top people. These aren’t just theories; they’re practical strategies that can elevate any team and any business. It’s also a fast, engaging read packed with insight. I found it so valuable that I immediately purchased five additional copies to share with fellow operators. That alone should tell you how strongly I believe in its impact. If you’re serious about improving your culture, service, and results, Service with a Side of Chaos is absolutely worth the investment. Highly recommended. ... show more

  • IF YOU WORK IN THE HOSPITALITY INDUSTRY YOU NEED TO READ THIS BOOK!
Format: Kindle
This is an amazing book, the story takes place inside the Pineapple Lounge, a fictional restaurant, however the scenarios are based upon real life experiences of the hospitality work force. The stories expose the wild reality of how one's work life in the hospitality industry is a delicate balancing act and not that of a teeter tauter, but of a trapeze artist. The stories describe how staff members must take a "leap of faith" and navigate their daily shift of uncertain situations, trusting in what cannot be seen or guaranteed. The stories discuss how one mistake may go unnoticed, two show up at some level, and three in the same day, regardless how small, have a rippling effect on the entire operation. Every story describes what happened, where the break down occurred, why it occurred and how to prevent it from happening again. This book emphasizes why a “post-shift” meeting is as important as a “pre-shift" meeting. Great stories, great learning! ... show more
