This is almost a pro level meat slicer. But, don't depend on the owner's manual for anything. It's completely useless. Much of it is along the lines of "Importance not to slice fingers by means of machine".. Here's what you need to know. The thickness dial is calibrated in millimeters. That's what the numbers are. If you want to make very thin slices of meat, freeze it hard first, then place in the refrigerator until it ust barely starts to thaw, then slice it. It will slice blocks of sharp cheddar cheese, but if you get it too thin - below 2 mm - it will crumble. Keep it about 2.5 mm and you'll be fine. Softer cheeses like mild cheddar, Gouda, and mozzarella sliced better. If you've never used a pro slicer before you'll have no idea how to clean this because, as I said, the user manual is useless. Step one. Remove the carriage by unscrewing the big black knob on the front bottom of it. Step two. Remove the blade cover by unscrewing the big black knob sticking out of the back at an angle. Step 3. Reset the depth guide to zero and remove the blade. You will need a 5 mm allen wrench for the three screws in the center of it. Make sure your hands are perfectly clean and dry with no lotion or grease on them. Wipe a small portion of the blade front and back so that it is clean and dry for you to hold. While facing the front of the blade, place the palm of your right hand over the blade guard so that your thumb and index finger can pinch the blade while keeping your fingers away from the sharp part and keeping you from being cut. While pinching the blade, use the 5 mm allen wrench with left hand to break each of the three screws loose, then remove each one. Carefully push the blade out with the fingers of your right hand and remove it by placing one or more fingers of your left hand through the center hole, pinching it with the thumb and forefinger of your right hand to steady it. This is the only semi dangerous part. Be there careful not to bump anything or you will cut your hand. Clean everything with warm soapy water, a soft cloth, and a toothbrush for the areas of the slicer which you did not remove. Make sure you wipe it down several times with a clean cloth and clean water to remove any detergent film. Wash everything else in the sink and let everything dry before reassembling in reverse order. Here's a great dog treat. Scrub a couple of sweet potatoes with a stiff brush, cut off the ends, set the depth of cut to 2.5 mm, and slice. Load the slices onto parchment paper or an oiled pan, and dehydrate at 180° until crispy. My dogs think these are one the best treats ever.

Awesome quality! I am very impressed after receiving this slicer. Exceeded my expectations for the price point. Was a little worried about the small number of negative reviews but after using I am strongly of the opinion that the negative Nancy's that do not have skills to use a quality tool are wrong. Some complain about the ease of cleaning. I had no problem deep cleaning. All slicers can be a chore to clean it's just the nature of them, some easier some harder. Overall I felt it pretty easy. For me it cut precisely and worked extremely smooth.
