I am a professional chef, needed something to sharpen the blades on my mandoline slicers, this is so easy to use and terrific for doing any knives, awesome quality and razor sharp results, if you are looking for a compact kit to use when you are onsite in the work place and do not want to bring your expensive and heavy whetstones with you this is magic! Usually use my Japanese whetstone set at home but too heavy to cart around with you! I noticed that some said this is no good for smaller knives, but actually the plate height is adjustable which I do not think the people giving poor reviews have figured out yet, thus this works as I said brilliantly for mandolin blades and small paring and even turning knives! The magnets are sturdy unlike cheaper ones I have tried and the design of this is so much better than the round rolling ones that I have tried previously! I love that it all fits neatly in its carry case and includes a leather strop for finishing to a mirror finish! Very easy to put this in my kit and not have extra bulk without risking ruining my very expensive Toijoiro Knves etc by using an inferior sharpener! The other thing I have noticed with this is that it is very adjustable, so I can put a 13o angle on my Japanese knives and a 17 on my European ones or anything I like! Easy to clean and maintain and well worth your consideration!

So I am basically just your average family man who happens to be into knives, both folding (pocket) knives and kitchen knives (I cook a lot). I own several high quality japanese kitchen knives and over a dozen pocket knives. I also own whetstones and the Work Sharp sharpening system, which I've had for a few years. The problem with both stones and the Work Sharp system is that the knives still have to be held at the proper angle (manually by eye) in order to use them successfully. The Work Sharp system cuts down on time but at the end of the day, you still have to hold the knives correctly and STEADILY to get good results. The bottom line is I'm not that great at it. I have managed to keep a decent cutting edge on my knives over the years but certainly nothing special....until now. I am incredibly impressed with this package. First of all, the quality of everything in the kit is great, including the case. There are slots for each individual item, even the eraser! It is magnificently SIMPLE to use and makes no noise, unlike the Work Sharp system which is unfortunately loud, not to mention much more complicated. I literally just received this about an hour ago and already used it on my three main kitchen knives, the results I got are shocking. I was in no way able to get this kind of edge on my knives using the Work Sharp, no matter how long I did it for. The simple reason is because of what I mentioned above - the angle has to be held manually...it doesn't with this kit. The magnetic block that holds the knife is extremely strong, even the largest knives don't move even when being ground with the 400 grit stone. And the angle can be precisely set with the adjustment wheel. The other side that holds the stones is perfectly designed with little wheels on the bottom that move very smoothly (and silently). It still takes a little time to get a hair popping edge, but again its so easy to use that you can learn to do it fast and really can't mess it up. I am so glad I laid out the 140 bucks for the full kit, it is so well worth the money. If you know how to use whetstones and are good with them, you have no reason to buy something like this. But for the average guy like me, it is well worth it. It has to be the quickest and easiest way to get professional results, which it absolutely does deliver.

I tried this right away on a small pocket knife and a large chef knife. The adjustable angle made it fairly easy to match the existing grind angle in each knife. The larger and thicker stones should last a lot longer than the rolling sharpners with the wood cylinder and round stones. The deluxe kit has 5 different grits from 400 - 6000. The 400 grit quickly removed a couple of nicks on the blade and I finished it with the 1000. The blade is good as new and much sharper. The stone "eraser" and leather strip are a nice touch for removing ving grit from both the blade and ceramics stones.nan added bonus is that replacement stones are available should I need to replace them. Some of the round sharpeners came with an extra stone or two, but finding the right replacements seems to be hit or miss. My only concern is that the magnets should either be larger or stronger as the large knife sometimes moved a bit as I rolled the stone against it. I am sure I will get more proficient as I gain experience using it.
