Description

Miyabi Mizu SG2 knives start off with the Tsuchime method, consisting of 3-layers of SG2 steel with a hammered finish to allow food from sticking to the blade. Next, the Honbazuke process involves the Katana edge being sharpened with an ancient 3-step process, which sharpens the blade twice on whetstones, followed by mirror polishing on a leather wheel. This process was used over 1000 years ago for samurai swords to create the ultimate sharpness. The Criodur process gives the steel hardness for blade retention, flexibility, and highly corrosion resistant. To deliver the outstanding performance, the blade is hand-honed at the traditional Japanese blade angle of 9 to 12 degrees on each side, which results in a scalpel-like sharpness. This outstanding performing blade is complimented by a stunning durable D-shape Micarta handle, featuring a mosaic pin, red spacers, and a metal end-cap with logo that adds balance. Handcrafted in Seki, Japan with a lifetime warranty.

My X stopped in (he is a chef) - and typically he criticizes my cookware (in a humorous but genuine way) and he went straight to these knives - BAM. Wow, he said, these are sharp! Nice handles. Really great set. Ok. Too personal. But hey, they handle well, are balanced in your hand, and so sharp I held it right over a tomato the other day and the darn thing split in half on it’s own!   • Beautiful knives with a flaw.
My knives were MEGA sharp when I first got them. Now they're kinda sharp and the utility knife is beyond dull. It can't even cut a tomato..... for the price I paid I'd assume these things could hold an edge better. Yes I know how to care for knives and use them correctly. I never use hard cutting boards. Just soft wooden ones or soft plastic. I immediately clean and dry my knives and store them in the block. I'm pretty disappointed with these..... ... show more
