Sharp knife but be careful. It is very brittle, don't use any twisting motion when cutting as it will easily chip and fracture, such as cutting an Avacado then burrowing the knife into the seed, and twisting the seed out. Drop it and it breaks like a piece of china.

This is my second Kyocera knife. I purchased the paring knife first to to see if I would like using this brand of ceramic knife. The sharpness is not consistent between the two my paring knife was much sharper. Still, I love using them. I painted the end of the handle with red nail polish to remind everyone in my house to be extra extra careful because it is so very sharp. Kyocera was very good about replacing one of them that developed a notch on the edge. I wish the economically priced Kyocera sharpener had better ratings as I’m sure as often as I use these knives, they will need a sharpening eventually. ... show more

Top of the line ceramic knife company produces the finest ceramic knives. The first thing I noticed is how light it is,and it felt like an extension of my arm. This knife is meant for slicing vegetables and boneless meat. It performs very well allowing very thin slices with little effort. It is designed where you can choke up on it for a more controlled cutting experience. Just be sure not to drop this knife as it can chip, wash by hand for longevity,although it is dishwasher safe. I am impressed with this knife,I plan on getting,the mandolin, and paring knife next. This knife will not replace my stainless steel chefs knife, because it cannot cut through bone or used to smash garlic. But it will be my main vegetable slicer. ... show more

I have bought 4 of these knives, because they are amazing, but I've had two break. It is such a good knife that I always want to have a backup now, so I keep two. Based on my experience, the knife will last for about a year before the ceramic blade chips or breaks. The most well weighted and ergonomic knife I've used though ... show more
