As early as the 19th century, Swiss watchmakers used to place steel parts in the snow to make watches more solid and durable. That's why our German steel blades are heated to over 1000°C / 1832°F and then ice-hardened (tempered) at minus 120°C / 184°F. This makes them more durable and corrosion-resistant. The weighted handle scores with ergonomic handling and optimum balance. The dark titanium coating provides an elegant look.

  • Ice Hardened German Steel for Durability not for cutting frozen foods
I received this set of 3 Kuhn Rikon iced knives. The set caught my attention first based on the bread knife. The bread knife I had been using was very long compared to this one. I like the length of this bread knife and feel like I have good control when cutting slices of Italian bread or slicing things like croissants. The other two knives with this set are very good as well. I do wish the chef knife with this set was smaller. I tend to like a 6-7” chef knife compared to this 8” knife. The chef knife is sharp and well balanced. The prep knife is a great size. It is larger compared to a paring knife and works well for cutting tomatoes, peeling potatoes, and various tasks that typically mean holding the item being cut in my hand. The knives are German steel and the listing says they are ice hardened. The knives were sharp when I received them. I am used to German steel knives that are sharpened or rehoned monthly so I used a rolling sharpener on the two straight bladed knives. It didn’t take much effort but I was happier with the way they cut after the additional sharpening and honing steps. These Iced German steel knives seem to be holding the edge very well. I was initially concerned with the material used on the handles. The listing stated that the handles were made from : Acrylonitrile Butadiene Styrene. I was unsure if this would feel good when using the knives. I don’t like the knives that feel textured with tiny little bumps. I was pleasantly surprised. The finish on the handles compares to a hardwood handle - silky smooth. The knives look like full tang knives. They riveted through the lower part of the handles. In my opinion, these knives feel like they will last for years with good care. ... show more

  • Good Knives but You’re Also Paying for the Name
I’ve known KUHN RIKON for their popular Epicurean garlic press, so I trusted that I would be equally impressed with their knife set. Appearance wise, I find the dark metallic coating sleek. The blades are fairly sharp, and even though these are stamped knives the handle feels sort of weighted because it seems to have a full tang running through it. But considering the price point, it doesn’t amaze me. This set comes to nearly $30 a knife, which I think is a bit overpriced. The flaunted “ice hardening”process involving heating and quickly cooling, or tempering the steel, is nothing new. This has been done on my German knives to optimize the structure of the steel and improve corrosion resistance. ... show more

  • Definitely sharp and easy to clean in the home kitchen
Product arrives attached to a cardboard card and simple plastic wrapping. 1.1.1 Our need We do lot of cooking and baking; there are times we need to use the same knife for different ingredients. It slows down the process to have to stop and wash a knife thoroughly before using it on something else. For example, slicing meat or poultry, then chopping herbs. 1.1.2 How we used This set has three great knives. We used the chef’s knife to thinly slice slightly frozen meat and poultry for stir fry, chop veggies and herbs, slice onions, and mince garlic. We even tested it on bread 😊. We bake our own bread, and used the bread knife on warm and cooled bread. We used the paring knife to cut apples and potatoes. Easy to clean. Dishwasher has not taken their edge so far. 1.1.3 Evaluation of success All three knives were easy to use and have kept an edge quite well. While we have other knives from the same German manufacturer, these slice more seamlessly, possibly because of the titanium coating. The knives are magnetic and adhere firmly to neodynium type magnets for wall mounting. 1.1.4 Other Comments We would definitely recommend these knives if you are looking for a lightweight, easy to clean and maintain for routine home kitchen needs.   • SO SHARP
I've only just started using these knives, so I can't speak to their longevity. However, first impressions wise, these are fantastic knives, particular at this price point. They are crazy sharp. They're weighted well so they feel good in the hand. I have small hands so I typically use a smaller chef knife, but the longer one in this set still felt relatively comfortable. They also look really nice. I've had dark colored knives like this before and that finish didn't last long term, so I'll have to keep an eye on that. I'm intrigued by the ice hardening and how that'll maintain the sharp edge over time, though I'm sure these knives will require sharpening like any other blade. So far though, really pleased with these. It was so sharp that the first time I cut with one I called my partner in to try them out too. ... show more

  • KUHN RIKON ICED Knives prep + chef + bread set
I got these since I wanted a side set of knives to use when i barbecue. Reading about how the knives are made (super cooled when forged) it sounded like a REALLY cool thing. So I ordered them....and waited....and waited. They finally arrived 2 days ago and I set off to use them. Lemme tell you...they are very mid. I have knives both cheap and VERY expensive and these are just...fair. I tried cutting a nice roast into smaller cuts. The knife cut but I had to put more pressure than normal to cut. We make bread here weekly. New loaf, tried the bread knife and same issue. Used the prep knife for tomato cuts, which any knife person will tell you is one of the BEST tests for now a knife is sharp. It cut but smooshed at the same time. Not a horrible set by any means, but it could be much better imo. ... show more

  • Not the sharpest knives in the drawer
These are my second experience with Kuhn knives. I have to say that they do not arrive very sharp. My first knife from them was not an iced knife, so hopefully these will hold an edge for longer than that one did once I got it sharpened. Until I get these sharpened, they’ll be OK for items that aren’t delicate due to the added pressure they require. They do feel adequately balanced in the hand and are otherwise fine. ... show more
