Instead of finding some random brand of a chefs knife. Go with this knife. This brand is recognizable as it has been a staple in homes for a very long time. It is very sharp, holds its edge, and rarely if ever needs to be sharpened.

knife is good but not excellent. you get slightly more than you paid for but not what I expect from the brand. handle is a bit unconfortable but not the worst. blade needed some work to sharpen out the packaging as well but is holding its edge so far. a good brand name cheapened by chinese outsorcing. update after 3 months of use. still 3 stars due to my not liking the feel of the handle but the blade itself is working out well. sharpened up nicely for me and holds its edge fairly well. just a few swipes on my ceramic "steel" and its good to go. blade is a good size for me and I like it's shape. as mentioned before, the handle is just a bit off for me. it's kinda slick and oddly shaped. it just not right for me to use for long sessions. ... show more

Arrived relatively dull. Of course it's not dull as in a 30 year old knife, but considering the reputation, I thought it would've arrived sharper than it did. No worries, I just sharpened it with a whetstone and now it's like a brand new edge again. But I shouldn't have had to do that considering the knife IS brand new. Dullness might not be caused by poor quality thougjh, it seemed intentional. I also bought a Statement chef's knife and that one came in pretty sharp, so I'm guessing they sharpened the Santoku knife deliberately. I found that quite weird considering Santoku knives are supposed to have a lower angle and like other Japanese knives it's supposed to be sharper. Oh well. I wouldn't out much weight on it though, since sharpness is a fleetinf feature. Like all knives get dull eventually. So far the steel looks like good quality. It says dishwasher safe but recommends hand washing. I'm going to hand wash this and dry immediately just to be sure. ... show more

I did not think I would like this size. Wow I was wrong. This knife sits well in your hand, rocks well and cuts well. The larger size works on everything I've needed to cut so far from onions to cubing roasts. So much so, I no longer use my shorter santuko. Great purchase.

I have a mixture of knives - mostly either the Mercer Genesis or Henckel. I'm not a chef nor a culinary expert but I do love to cook and enjoy preparing food. A sharp knife is a must for me. I hone my blades each time before use and the sharpness for the most part stays until I'm finished. I didn't have a Santoku knife and decided to purchase this one. What I've noticed is that this blade doesn't hold its edge like my other blades. Since it's my first Santoku, I'm not sure whether its normal for a blade of this type or if Henckel just dropped the ball on this one. Sadly, it will probably stay in my knife drawer instead of being used. Not recommended. ... show more
