First off, I've only used these to cut a memory foam mattress topper to fit the back of a small van for padding when I'm taking the dogs along with me. Not a traditional use, for sure, but they do an exceptional job cutting foam. It made cutting floppy foam easier than expected and the cuts are smooth and clean. They're ergonomic in my hands and easy to hold. They seem quiet to me, but I haven't used an electric knife in many years, so I may not be the best judge. The blades are sharp and easy to install when I'm ready to cut something. There aren't a bunch of safety switches to depress just to make a cut, you just pull the trigger and get to work. In short, for the low price I paid, these are a lot better than what I expected. Now that I'm done cutting the memory foam, I'll put them to use filleting fish. Lots of people use electric knives for that job, and the narrow width of the blades should allow this to be a great filet knife. Now I just need to catch some. There might a downside. I looked for replacement blades - there's nothing sticking to or otherwise wrong with the blades after cutting the foam - but so far, I haven't found replacements. If I wore these out, I'd hate to think I'd need to buy a new knife but let me emphasize, I looked for blades, but I did not do a thorough search. Yet. We bought this to replace our previous Hamilton Beach electric knife we’ve had for over 10 years. This one has an updated design, the blades insert and are removed easily, easy to clean and worked very well. I loved the case, and it came with a meat fork. Used it on the Easter ham. Great buy!

    • Sharp knives but!
Style: New for 2023 Pattern Name: Knife
The electric knife is very powerful with very sharp blades, but what I might suspect to be safety design features make using the knife frustrating. First, the trigger must be pulled backwards to engage the knife; so that means, you must continually be pulling backwards on the trigger with the index finger as you use the knife. This trigger motion might be ok if you use the knife like a saw with a back-and-forth movement but is awkward when using the knife to slice downward as most people do when using an electric knife. Second, there is a shield right in front of the trigger that hangs so far down the it prevents cutting anything completely down to the bottom. Of course, this is not a problem if just making slices say of a turkey breast but prevents cutting anything completely to the bottom. If I want to make complete slices of anything, I put it on a cutting board and bring the food and board to the edge of the counter. This is the only way I can make complete downward slice of anything. I wish this knife hand a normal grip or squeeze trigger as the previous knives I have had, and the design of the body of the knife allowed you to easily make complete downward slices. ... show more
