  • Took some practice - here are some tips...
I have always made ravioli by hand. No molds. Working with this ravioli mold took a little bit of practice, but I’m quite happy with it now! A few tips: The first thing I learned was to use lots of flour so that my dough doesn’t stick. For the first batch, I just sprinkled lightly with flour, and it was a sticky mess. Be sure to flour the mold to within an inch of it’s life! Don’t skimp! Put your ricotta filling in a Large disposable pastry bag with a 1/2” diameter opening where the piping tip would go - this makes filling a breeze! You can gently press a little filling out while settling the dough down into the divet of the tray in one simple step. Perfect fill every time! Don’t overfill! When you use rolling pin, the ricotta will ooze between your sheets of dough and make a poor seal. Any trimmed dough will not be able to be reused if covered in filling. Take a minute to dip your finger into a little bowl of water to moisten the strips of dough between Each divet of filling. This will help to create a good seal so your ravioli don’t open during cooking. I wasn’t getting a good cut with wooden rolling pin. Maybe my dough sheets were a little too thick. So, I gently pulled the whole sheet of ravioli out after rolling and cut them with a pastry wheel really quick. This was much faster and less frustrating for me. Lastly, I didn’t readcarefully - these are small ravioli. The dough/filling ratio is perfect and I’m happy with this product, but I didn’t expect them to be quite so tiny. I can hold about 6 of them in the palm of my hand at a time. If you’re cooking for a crowd, you’ll need a lot of ravioli - and you’ll be an expert when you’re done! ... show more

  • Surface could be smoother.
Great sturdy product but wish the surface/finish was smoother so the finished product would come out easier. Even with dusting the surface with flour beforehand, it was still a bit difficult to get raviolis out without trying to individually pick at each one. It gets better with a little practice.

  • Makes very small ravioli
A little difficult to use. You have to put a very small amount of filling in the holes for the ravioli to be properly sealed. It took a while to get the hang of it. I think I would have preferred one with less raviolis per tray, and a bigger finished ravioli. My mistake in not measuring out how small the raviolis would be. ... show more

  • Built solid, difficult to use.
I really like the idea of this when I purchased it, and really wanted it to work amazing but in reality didn’t. The amount of filling each “ravioli” square holds is extremely small. During the process of rolling the top layer of dough to seal, any extra dough pushes up and over to the next ravioli square and makes a mess. Also the pattern between squares is minimal and does not create a great seal or separate easily. Next time I’ll make ravioli by hand. ... show more

  • Too small filling size!!!
Very disappointed. The way this tray is set up, much too small space for filling!! Does not work well. Result was a clump of dough with a speck of filling inside. Trust me, go with a larger size!!!
