First, let me just say, this warmer is not something that you are likely to use at dinner, or even at a dinner party. The picture is somewhat misleading. This is huge! It holds 10 L, which is a little over 2 1/2 gallons of soup. It is clearly designed for commercial use or large events such as a wedding or a church event. It is also NOT DESIGNED for cooking food, but rather for keeping food warm for serving. It works on a water bath principle, which also sets it apart from typical home appliances. Your typical crockpot-type appliance has a container for holding your food, which may typically be stainless steel or crockery, which is heated by an electric element on the bottom or sometimes the bottom and sides. This is fine for household use because the food is not usually in a warming mode for prolonged periods of time. In a commercial foodservice application, however, this soup must be maintained at a safe temperature, typically 160°F, for prolonged periods of time, perhaps 8 to 10 hours. The hotspots created by those external heating elements will inevitably overheat and burn the food on the bottom. It is for this reason that commercial kitchens almost always use a water bath or steam table. The vessel that holds the food is surrounded by hot water, which transfers the heat evenly to the food, minimizing the risk of burning. That is exactly how this warmer works. A maximum of about 1/2 L of water is placed in the outer container, which then heats the inner container with the food. The desired temperature of the food is set by the control knob, which in this case is labeled in degrees centigrade. One measure of the quality of the appliance is how quickly it can reach the desired temperature, because during the transition from cool to hot, the food will pass through temperature ranges that are ideal for bacterial growth. This warmer did an admirable job. I tested it with a gallon of water at 98°F, which is just barely lukewarm. The temperature dial was set to 70°C, roughly equivalent to 160°F, and it took the warmer 30 minutes for the contents to reach the target temperature as measured by a digital thermometer. This is as good as or better than the commercial equipment that we use in our fast food restaurant. It also maintained the target temperature within 1° over the next half an hour. Overall, I was quite impressed by this unit and plan to put it into use in our commercial kitchen. It is also aesthetically pleasing and would be very appropriate for a self-serve environment. If you have the need to keep a large amount of liquid food at a safe temperature for a long time, I don't think you'll find a better choice. Highly recommended.

This soup warmer works well and does exactly what I need it to. I like that I can adjust the temperature, which makes it easy to keep soups at the perfect warmth.
