Love this kitchen knife. Have owned it for several months now and it is still as sharp as when I got it. I never put it in the dish washer, it still looks brand new and I use it three or four times a week. I do keep it in the box it came in, it stores nicely in my drawer.

This 8” Chef’s Knife is very sharp. It’s also great looking and feels fairly good in the hand. It fits my very large hands and also my wife’s small hands. My only gripe is the fitment of the handle could have better tolerances - there’s a noticeable ridge wherever the wood of the handle contacts metal. Obviously, this doesn’t affect the performance of the knife, but ridges could harbor bacteria if special care is not taken when cleaning the knife. I prefer all fitments to be smooth, with no gaps or ridges. I’m very picky, so I took off one star for this. ... show more

Right out of the box the knife is stupid sharp. I just wish it had a full tang. The handle feels light, it just doesn’t sit right in my hand I feel like it always wants to slip out. Great for practice but I’m still looking to bond with a chefs knife that truly feels like an extension of my arm and not a cheap prosthetic. So, I am questing for the Perfect (Inexpensive) Chef's Knife. Of course, such a thing is highly personal, so your "perfect" won't be mine, but I hope I can provide some useful comparison information. I am too obsessed with chefs knives and knife edges in general, so I get asked for recommendations by friends -- over the last few years, the standard, automatic recommendation, the Victorinox Fibrox (available on Amazon, and a great choice), has crept up in price, and more interesting choices are coming in at substantially lower price points, so the hunt is on. Further, some balk at the ... industrial aesthetic? utilitarian chic?... of the Victorinox, so it's nice to have other options to suggest. This one is interesting... *especially* at the price point. It arrived in a passasble, if simple, presentation box, with no logo, nor documentation. A breathtaking gift, it is not... but that's not the important bit. Not enough for me to take a star off on its own, but it didn't help the rating. It includes a plastic skeletonized blade guard, which is a nice touch if you're going to keep this in a drawer instead of a knife block or magnetic rack, too. That out of the way, this is a pretty interesting option if you're shopping for an 8" chefs. It is thin, reasonably light without feeling flimsy, unusually sharp, and nicely finished. The granton edge (scalloping on the side) is an unusual feature at this price point; whether it does much on any knife might be debatable, but it's a nice touch. If there are criticisms (and would you trust a review without critique?), the quality slips a little with how the wooden handle aligns with the bolster -- there's a small, noticeable ridge -- and the faux Damascus-steel look on the blade won't fool anyone... I could argue either the negative that it's cheesy or the positive that at least it's different, but that's a matter of taste. And those are cosmetic, and trivial, criticisms, anyway. Also a matter of personal taste, it's a touch tail heavy -- I prefer the Vic's more forward balance point, but it is not awkward nor obviously "unbalanced" like some. If you prefer a slightly handle-biased weight balance, you're good to go. The important thing? Right away, this thing is wicked sharp. On close examination of the edge, it's neither uniform nor flawless, but at this price point, that's excusable. It passed the "slice paper for the 'gram" test with flying colors. More importantly, it made quick work of the vegetables and meat I threw at it, and didn't show any immediate signs of dulling, unlike some of the competition. I'll use it a bit and report back if the sharp edge is unusually durable... or unusually fleeting. Overall, I have to say I'm surprisingly impressed. In fact, I had to go back and check the listing, as I wasn't sure how great a value it was, and wanted to double check it's asking price... I thought it was in the $50 neighborhood and a decent option, but at the time of this review, it shows as $25: That's a great bargain. And puts it in the "buy a few and hand them out," or, at *least* "don't worry too much if someone who is carelessly tough on knives grabs it while helping" category. Strong buy. The flaws are easily overlooked at this price for what you get. Only you can decide if the cosmetics are a positive or a negative, but as a knife, it functions well above its price point. If it holds an edge even reasonably well, it's a great knife. If it doesn't, well, I've certainly used, bought, and been given, worse. Good luck with your shopping and cooking! I needed a sharp, chef's knife, saw this, and ordered it. It came in a beautiful box with a knife blade cover. It appeared well made. It has a similar appearance to a santoku knife. I cannot say if the tang goes through the handle or not. Usually, I can see that. It feels like it is balanced and easy to handle. IT IS VERY, VERY SHARP. I decided to try it in pumpkins and spaghetti squashes. The knife cut the pumpkins like it was going through butter. I cut up 7 or 8 pumpkins for my hens without an issue. I then went for the spaghetti squash. They are notoriously hard for me to cut open, and my husband fears I will cut off my hand wrestling with them. The knife helped. The spaghetti squash was easier to cut open, not as easily as the pumpkin, but definitely easier. After use, I immediately hand wash it and put it away because it is very, very sharp and I do not wan anyone cutting themselves on it. I am not a person that puts sharp knives in a dishwasher, ever. Overall, the knife is working well for me, and I recommend it. ... show more
