First off, the knives handle well and feel good in your hands and they compliment our kitchen remodel very well. The serrated knives work great and are able to cut all of the things they're supposed to. The knife sharpener has settings to vary the angle of sharpening on the knives and has a coarse, fine and scissor sharpener. However, the straight edged knives will not hold an edge. Any chef will tell you to sharpen your knives before using them. With these blades, you'll not only have to do that, but sharpen them multiple times while trying to use them. They refuse to hold an edge and won't even slice through anything with a skin on it such as a tomato or pepper without first puncturing the item and then trying to slice through it. Sometimes even then, you end up with squished tomatoes or joined pepper pieces where the blade didn't fully penetrate the skin. They are very frustrating to use. We treat the knives as you should and only hand wash and dry them immediately after each use and put them back into the knife block, but alas, when we take them back out to use and sharpen them and then attempt to use them, it's the same old "dull" story. Perhaps the sharpener is not working correctly since they never seem to be sharp or perhaps it's just the blade content or some combo of those. Who knows, maybe it's me, but I've been sharpening knives since I was 8 years old and got my first cub scout knife. That was almost 60 years ago, so I'm assuming it's the knives or the sharpener. Based on my experience over the last year and a half of use, I would not recommend these knives.

We spent a lot of time researching knife sets since we just remodeled our kitchen and cook quite a bit. Budget was less of a factor, and we were willing to make an investment. We've owned Henckel and Sabatier knives in the past and used them until they literally fell apart. This new set looks beautiful and feels amazing. Great weight and balance. Super sharp. We especially like the configuration in this set as opposed to sets that include steak knives which we didn't need. This is a true home chef prep set. Delighted!

These are sharp and gorgeous! I lost my pearing knife but can’t figure out how to ask the seller if they sell the single H1 series pearing knife.

Okay so these knifes are amazing. Truly. Sharp and cuts through things like butter. Be careful though. I’ve cut myself many times and one knife cut through a sponge sliced me right open and had to get stitches. Other than that hiccup, I would highly recommend. Handle with care. But there’s are best bang for your buck!
