All of the small-holder farmers in these co-ops use traditional wet processing methods and dry their coffee individually in the hot tropical sun, adding a distinctive earthiness and taste of place to the final cup.

The roast matches the coffee perfectly. I was at first concerned when I read the bag and saw and saw lemon in the flavor profile because I don't light bright acidic coffees. The lemon note is more like a light lemon peel fragrance in the background. I would call this a well rounded pleasant mid note coffee that is so easy to drink that you forget to think about it as you drink it. Mexican coffees are one of my favorite coffees and are often overlook in favor of the more mundane Colombian coffees. I live in north Idaho and there are eight roasters within 15 minutes of my house and there are over 100 coffee houses and drive-thrus in the area so I have a wide coffee experience. I usually buy local, but I couldn't find any Mexican coffees being roasted locally and I bought this on price/convenience the first time and on taste the second. This coffee is slightly one dimensional, but it does that dimension very well and the roaster should be proud of their work. I have paid double for much worse coffees. I hesitate to give a positive review to this coffee because I don't want it to become so popular that they run out! It's great if you get the whole beans and grind it fresh -- smooth, not bitter -- good in espresso.

The taste is absolutely delicious if you like a very nutty bold flavor, it’s smooth and the acidity wasn’t too harsh on my stomach! I would honestly recommend and repurchase!

We've tried them all and this is the best purest coffee! Dark and even most medium roasts taste burnt and they ruin the pure flavor of coffee. This light roast let's the flavor shine.

Full disclosure: I’m a total coffee snob. I own it. Also, I’ve been ordering for years from a custom roaster, so I’ve come to expect very specific quality and roast level. They had a supply chain issue so I ordered this as a stopgap until my “real coffee” arrives. Allegro isn’t misleading anyone. They call this Light Roast, which covers a range of levels. This is at the darker end of still being light roast. The crack and dryness are consistent with Light level, but I am looking for a lighter color - just seconds past cinnamon. Notably, the flavor and acidity of this coffee is not at all consistent with the Chiapas I get from our regular source. Allegro’s is more acidic and bitter, by far. While not as bad as Folgers or the burnt swill Starbucks audaciously passes off as “coffee,” Allegro’s Chiapas is not what anyone should use to judge whether or not you like whole bean Mexican Chiapas at a light / light city roast level. Properly roasted and sourced, Chiapas is one of the most delicious mild, morning coffees in the world. ... show more
