I bought this 8.5" commercial meat slicer for my home kitchen, but honestly, it performs like something you'd see in a deli. It is a quality machine and at a $300 price point, the body and material of the blade are as expected and justify that price. It is the function where I wished for a bit more. The 8.5 does not do thicknesses that I would have liked for steak or larger cuts of meat, but does thin really well and would be great for deli meat, cheeses, and for my purposes for slicing jerky meat. It made consistent slices that marinated perfectly and dried at the same time. It is sharp and will cut. But, where it drips out on the back is difficult to access and a bit dangerous (see photo). It also sheers and does not cut full all the way through to the end. I will modify by adding a small block to the inside of the plexi shield on the left side of the holder, but this should not need to be done to slice all the way through. I had to turn my beef after every cut to not end up with a "tail" on my meat (see photo for start of tail and sheering). Cleaning is also difficult. I am not sure what the right solution is here, and maybe it just is how all slicers are, but small bits of meat are inside the blade case along the bottom (again, see photo). I will have to use a brush that is not included and get creative about how to clean that out, and it is in a very dangerous place. The thickness adjuster is smooth and it has a good range of thin options. It holds once placed in a particular spot. There is a built in sharpener, which is a great feature. I would expect this to last for years, but with the modifications I will need to do I do not know that this will become my go-to jerky slicer. ... show more
