VBI Milano 1898 Deli Slicer Blade, Serrated, 10" / ASIN: B0DN43DJ8Y / $170 This serrated edge blade is fantastic! The material, machining and finishing is top notch. I demonstrated parting a Portuguese roll lengthwise into 1/4" slices and had a fun time doing it. But first, I need to issue a few disclaimers. Disclaimer 1: This blade appeared in my Vine offerings when I coincidentally was shopping for a slicer from VBI Milano 1898. So, I purchased the blade. A personal issue arose and I had to postpone the purchase of the slicer -- it is a big investment, but it is also premier deli slicer. I ended up ordering a less-classy appliance. Regarding this review, all photos posted show the VBI Milano 1898 10" serrated blade mounted on a LEM 10" Deli Slicer. Surprisingly, it fit.. it fits perfectly on the mounting hub with all three screw holes lined up. The blade spins with no interferences (video attached). However, the three countersinks on the VBI Milano blade have no recess and are about 1mm less deep than the LEM blade -- this results in the blade cover raised ever so slightly above the inner peripheral of the serrated blade's cutting edge. It's important to note the countersink angle is very much the same so the screws are making full contact. Never use screws that don't have the same shape as the hole which would leave only a single point of contact vice the full face of the countersink. I've tried to show this in the pictures. This can be easily rectified but that is not the reason for this disclaimer, which leads to disclaimer 2. Disclaimer 2: I am in no way whatsoever condoning the use of one manufacturer's slicing blade in another manufacturer's machine. You most definitely should stick with what the equipment is designed for. It is guaranteed the manufacturer would expressly tell you to avoid commingling parts. I procured this blade with the intent of purchasing VBI Milano slicer. But until recently, I did not have a machine to test the blade and only then did I notice the hub was similar to the VBI blade received weeks before. Vendors are generous when offering their products; it is only courteous to provide genuine evaluations and reviews. My apologies to the vendor for the delay in posting a review. Continuing, I will say this much, experimenting with this blade and using the ingenious "blade extractor" tool that VBI Milano includes in the kit has recharged my desire to own their slicer. If these two parts I currently have are any indication of the overall quality of their other products, I know that machine would be a joy to use. And so much safer with the blade removal process, and faster -- but only because it is safer. And that means it is so much easier to swap blades for different foods without hesitation. Here I was first thinking the ideal situation would be to have two slicers so you don't have to worry about the time consuming blade swap. With VBI Milano, there is zero chance of either cutting yourself or damaging the blade while trying to fit it to the hub. It's a bit precarious without a proprietary blade handling tool -- if you don't cut yourself, you might be dropping the blade on the machine base. This blade handling tool makes the task so much easier; it alone is a major selling point. Lol buy that machine for the blade tool -- still a fraction of the cost of a trip to the ER. With the serrated blade function, the results speak for themselves. I wanted to keep slicing, it was a lot of fun... but I only had one roll. If I had a dozen, they would have all been sliced. I would have also liked to record the blade slicing through bread but it is only me -- eyes front when running these things. I now see the practicality and versatility of this blade type. Making crispy toasts from the thin slices of bread, cube or finish cut them diagonally then toast in oven for croutons or dipping sticks... and that's just the bread. A serrated blade is ideal for softer foods like cheeses. The gaps between the blades break up the suction created by soft, dense foods and thus limit that pulling effect as it's dragged across. The result is cleaner cuts on these type foods. You already know you can save a lot of money buying your meats in bulk then parting those cuts out for separate cooks including sliced servings. Same with cheeses.. most freeze well. Cut and freeze 1/2 pound blocks at a time, thaw and slice when you need. Some other uses include fibrous meats that tend to tear. Also, delicate vegetables and fruits. And what I originally intended to do with it -- evenly slice up fresh pineapple for the dehydrator. The serrated blade is perfect for that act. But the best thing about slicing bread? Much easier cleanup. A quick wipe down with a damp cloth to pick up the obvious crumbs followed by a quick blow down with some compressed air. This is a long review. I dislike long reviews. But some points needed to be made clear. And I very much like this blade. I will continue to dream of marrying it to the machine for which it was made. Fit and finish on the blade is very good. Definitely sharp. Nice for slicing soft items that are hard to cut with a smooth blade like cheeses and breads.
