As the white Tupelo trees along the Apalachicola come into bloom, we strip the hives of their earlier honey and set on fresh, empty boxes — so what the bees gather next is the Tupelo. Then we race the bloom, pulling those boxes the moment the blossoms begin to fall. That short, careful window is what captures Tupelo's signature flavor. It's a tradition Kirk and Sharon have kept for decades — honey this distinct can't be rushed, only timed. Never heated or over-processed. Bottled the way the bees made it.
