Making pastrami, had to trim 5 lbs of hard white off a monster of a brisket. The blade arrived yesterday, and i used it to make the first cut. I...I had to force myself to use my personal 8in chef knife just to make it feel included. The utility knife is crazy sharp, probably the sharpest budget knife i've ever used out the box. It spears and slices through fat like its room temperature butter, and i didnt need to clean bits of tallow off it; the indented pattern looks great and functions great. It fit perfectly into the deckle crevices like it does cave exploring for a living. A 20 minute job that i dragged out by using my not as sharp chef knife on the top for the surface area of cutting. But, if i used the utility knife for the whole thing....It might've been 15. I'm hyping it up but first impressions are giving it a priority spot on the magnet rack, and making me review a product on amazon, which i never do.

I pre-ordered this blade before it was available on the Tuo site, and used it for the first time today. Did not think Tuo could improve on the Falcon nakiri, oh, was I wrong. UNREAL. I would easily drop much more cash on this blade! Fit, finish, balance, SHARPNESS, ergonomics(if you look closely, the handle is slightly offset where handle meets blade, making this and all Tuo nakiri knives anti- fatigue and the perfect pinch grip) and aesthetically beautiful. Can't say enough about this company or their products. Only negative thing I can say is these blades are not for the novice they will remove body parts if not careful, knife skills required. Hats off to Tuo, doing it right for the Chefs that require quality tools day in, day out, and not breaking the bank. And btw, I'm not endorsed in any way, shape, or form, by Tuo or anyone else to review any cutlery. My 12 hour shifts are more than enough to give an honest opinion. Ciao.

I’m a chef in Chicago. It’s a good knife for home but it’s not a work horse for everyday work. Fresh out the box, it’s very sharp it works great and looks good. The edge didn’t last too long (2 weeks). My other knifes last longer but for the price and the look it’s worth having around at home. Makes a great gift.

Super sharp out of the box. I learned how versatile these knives are from Bee Wilson’s book “Consider The Fork” I no longer go for my Wustoff knives very often. This is my type of knife now. It aids in slicing uniformly. I was able to cut apples into 1/8 slices for an apple pie fast and easy before they started to turn color.
