One of the best entry level rolling sharpeners. This has one side removable disc for higher grade sharpening stones like the available 3000 and 6000. This works perfectly fine. In five minutes a side I could sharpen the knife to near new. Next time I will order the extra discs and the leather strap to make it a complete set. I am COMPLETELY satisfied. I've watched a bunch of videos and read a bunch on these rolling sharpeners. Let's be real... when it comes to knife sharpening the proper way with a whetstone, most people are terrible at holding the exact angle consistently, and don't have the patience to learn... I enjoy cooking, a lot, but never been excited to sharpen knives. So for someone who hates sharpening knives, doesn't have the patience for a real whetstone, and has had bad experiences with electrical sharpeners, how does this stack up? I sharpened two of our cheaper knives (one western chef's knife, another santoku) which hadn't been sharpened since I got them 5+ years ago (we usually use the more expensive knives because they're just better). I sharpened each side for a few min with the heavier and finer grit each. They're significantly sharper now. Unlike with a honing rod, there was visibly steel dust on the counter and on the blade, and I wiped it off after -- this is what you're supposed to expect. You know it's taking off some steel to actually sharpen the knife. After using the knives for a week, I redid them again, went for a really razor sharp edge. And yes, I got it, easily passing common kitchen tests like regular paper and tomatoes. A few weeks ago, these were so dull they were more like tomato mashers. The main performance contention of roller sharpeners are not to be overlooked though. None of these are unique to THIS particular sharpener. These issues apply to ALL rolling sharpeners. * rollers don't do broken or dull tips very well. Most kitchen knives (other than carving knives) have an arc in the steel that gets steeper closer to the point. Rollers don't handle the arc well. You can kindof curve the roller around it, but I get the vibe it's not holding the angle properly when I do. * the magnetic base moves a little too easily for my flavor. Yes, there's rubber on the bottom to make it not move, but you're supposed to have this balance of pressure going, and it's not the same when you get to the end of the blade. I feel like mounting this base to a workbench or other large flat surface would produce a better, faster, and more consistent result. It's still passable on a countertop, but not ideal. * rollers don't work at all with shallow knives like many EDC pocket knives, filet knives, or even some yanagibas. If the blade doesn't stick out at least a few mm past the magnetic base, it's not going to work. * if you're trying to sharpen a really deep blade, like a cleaver or some carving knives, you'll need to raise the roller, like on the flat side of a cutting board, while the base and knife are on the counter. The final issue comes down to price. I was holding off on rollers in general before because I've heard a lot of not-so-great things about their durability. I saw this available for review, and the pro model is supposed to have one of the toughest diamond sides on the market... 4 layers, and interchangeable (non-pro version has neither). Other models either have no interchangeability (even the non-pro version of this... when the disc is done, that's it, you need to get a whole new roller), or especially on the super-cheap knockoffs, the discs are made of junk layering that's not going to last. Some knockoffs even come with 4+ discs specifically because their layers wear out super fast. This comes with just the two, one for each side, one coarse, one fine. Replacements at this time are $50-60 for the pair, but looking around, many aftermarket discs either do not fit this, or use junk layering that's going to smooth out quickly and stop being effective. Only time will tell, so if you're reading this far out from the post date, I haven't come back to the review to say it wore out, and I'm still happy with it. ... show more

This is a very nice knife sharpener that works well and should be able to sharpen plenty of knives. It also is a very expensive knife sharpener; and while value is subjective, this is about twice as expensive as others I've used of similar build and quality. This knife sharpener is built pretty well, and it's got a nice feel to it. The two sharpening discs (standard and ceramic) do a good job together of helping you create an edge and then sharpen that edge down to a fine line. It's got a removable disc so you don't have to replace the whole thing when one wears out. The cylinder rolls easily and is easy to work with thanks to the rubber and rotating cylinder base, which lets you set your knife up and just roll the sharpening disc across the knife edge. The magnetic angle setter lets you set any metallic knife up and roll the sharpening disc along the edge, at either a 15º or a 20º angle. It does in fact make your knife quite sharp - be careful if you're used to using unsafe dull knives. Finally, it also comes with a QR code that will link you to video instructions that are handy in case you aren't fully sure about how to use it. Confusingly, only the ceramic disc is removable, which is very strange since you'll need to replace the other side the most. Luckily this is a pretty standard factory cylinder so you can easily find a replacement disc or cylinder on Amazon that's compatible and will work with whichever disc needs replaced. There's also the price, which I very much don't understand being nearly this high, at over twice the cost of one I've been using since I got it here on Amazon that is around just about as well made. Price is subjective so I only give a small consideration to it in my reviews, but I genuinely don't think there's nearly $160 in one of these standard cylinder knife sharpeners that's made with the same standard cylinder and screw-on disc sizes - no matter how much I like the ceramic disc. * I only review things that I personally use myself on a regular and continued basis. * I always give my full, honest, unbiased and unfiltered opinion on everything I review. * I will not hold back or avoid describing any issues I have with a product. * I write exactly what I think about things - the good, the bad, and everything in between. * If I get multiple of something it's because I regularly use and need both of them. * And, I will update my review if something breaks, stops working as intended, or otherwise doesn't hold up as expected. ... show more
