Advantage of Freshly Ground Spices There are many benefits to freshly grinding pepper, salt, herbs and spices for cooking and seasoning. A quality mill with a specifically designed grinding mechanism will release the aromas and essential oils of that spice. Peugeot has 7 unique spice specific mechanisms for pepper, salt, herbs and spices, coffee, wet salt, chili peppers and nutmeg. For each spice, there is one - and only one - Peugeot grinding mechanism, each made of the ideal design and constructed from the best material available for its intended use. Peugeot's Pepper Grinding Mechanism is a two stage burr-style system. During production, the helix-shaped grooves and grinding teeth of the pepper mechanism are individually cut before the steel is case hardened to make it virtually indestructible. The mechanism is then given a proprietary treatment to provide additional protection against corrosion. During use, the helix- shaped grooves guide whole peppercorns through the mechanism to crack, then grind to a consistent size by a double row of teeth. This process releases the pepper's essential oils, resulting in more flavor and aroma for your dish. This patented mechanism is found on every Peugeot Pepper mill and is widely considered the best pepper mechanism available Peugeot's Salt Crushing Mechanism features two ribbed plates which work to fracture and crush coarse, dry sea salt to a consistent size. The salt grinding mechanism is made of corrosion resistant Stainless Steel, and is found on every Peugeot Salt Mill. A Peugeot Innovationu'Select is Peugeot's patented grind control system for electric and manual grinders. Beyond personal preferences, different stages of the preparation / cooking process and different dishes often call for seasonings of varying sizes. Peugeot now offers the ability to quickly, easily and accurately adjust the grind settings with its patented u'Select system. From coarsely ground pepper or salt to very fine, u'Select offers:-6 pre-defined levels of grind for pepper, or any point in between.-6 pre-defined levels of grind for salt, or any point in between.Simplicity: just turn the ring at the base of the mill and select your grind size. The further you turn the ring, the finer or coarser the grind, depending on the direction turned.Precision: no risk that the grind will change during use. The right grind: You are assured that with each setting, the grind will be consistent, time after time. Fine or coarse grind-is it just a question of taste?Actually it depends on personal taste and the dish being prepared. While personal taste plays a role, some dishes call for coarse salt or pepper, whereas others require either or both to be finely ground. A finer grind will be used for a delicate sauce or mixed raw vegetables and a coarse grind for grilling a steak or when making heartier meats and dishes. Anatomy of u'Select MillsThese mills feature the innovative u'Select system. u'Select mills have the same renowned grinding mechanisms, beauty and functionality as classic Peugeot mills with an additional feature of easy grind selection. When you want to adjust the grind of your salt/pepper to more coarse or fine, you simply turn the u'Select ring at the base of the mill. You can select one of six pre-marked positions, or any point in between, for infinite possibilities. Your selection will not move or change until you want it to. Manual MillsFor best grinding results: hold the mill body steady and turn mill top in a clockwise direction only Electric Mills Press the Power switch to grind pepper or salt. Light will illuminate underneath mill when power switch is pressed. u'Select Ring:The narrower the wedge, the finer the grind. Which pepper and which salt can be used in Peugeot Mills?Pepper: To get the best results, we recommend you to use only dry, hard, whole peppercorns that are 5 mm (1/4") or less in diameter. Black, white and dry green peppercorns can be ground in Peugeot pepper mills. Pink peppercorns can be ground only if in a blend (max 15% pink) with one of these other peppercorns. Dried coriander seeds are also suitable for the pepper mechanism. Salt: To get the best out of your Peugeot salt grinding mechanism, you should use: dry salt, ideally with a diameter of 4 mm (0.16") such as coarse sea salt or rock salt (salt mined from an underground salt seam). Do not use your Peugeot salt mill for grinding pepper or any other spice, or damp sea salt (also known as grey salt, Guerande, Re, etc.) The moisture content is so high in damp salt that it will corrode the mill. Use a Peugeot Wet Salt mill with a mechanism specifically designed for damp salt. Its shape and materials have been designed to resist salt corrosion. Exceptionally well-crafted, the Paris pepper and salt mills from Peugeot are traditionally styled of turned beechwood. This particular model offers the U-Select feature, which designates six settings on the base of the mill for precision grinding ranging from extra-coarse to powdery. The difference between the salt and pepper mills lies in the grinding mechanism. Peugeot pepper mills use case-hardened-steel grinding heads with two sizes of grooves; the larger grooves crack the peppercorns in half and direct them into the smaller grooves, which grind them much more finely than most mills. The grinding mechanism in Peugeot salt mills is purposefully constructed with 18/10 stainless-steel, which won't corrode from prolonged contact with the salt. The top of each mill unscrews for adding peppercorns and salt, while the round ball nut can be loosened or tightened to vary the coarseness of the grind. Paris pepper and salt mills are sold individually and in sets. The mills come in a wide range of heights, from about 5 to nearly 20 inches, and in a variety of finishes, including matte chocolate, natural wood, and shiny blue, yellow, or red lacquer. Care for the mills is easy: clean the exterior and inner chamber with a damp cloth; never immerse in water; avoid putting salt in the pepper mill, or grinding green or pink peppercorns by themselves (mixed with black is fine); and avoid damp types of salt (usually pink or gray) in the regular salt mill. Made in France, Peugeot mills are covered by a two-year replacement policy, while the grinding mechanism is covered by a lifetime warranty.   • France Might Not Win Wars, But They Crushed It On The Pepper Mill Front Like the Peppercorn That The Competition Truly Is

Oh. My. God. This thing is MAGNIFICENT. I pulled it from the box with great trepidation because I bought another brand, the Trudeau 071322 Excalibur, and it had big flaws and a rusty screw on the grinding mechanism with the chrome plating worn off of the mechanism, and the replacement was really rusted over. Go over there and see the photos, I'm not kidding. After two of those Trudeau demo units/factory rejects, I was over it and decided to spend twice the money and get this Peugeot, hoping they would do it right and give me a flawless product. They did. I liked the darker chocolate color, but reasoned that with this natural color Peugeot, they couldn't hide any flaws behind paint or stain. Wise move, if I don't say so myself. This thing looks better in your hand than in the photo. Beautiful. Where the Trudeau had rough turnings with more raspy cross-grain grooves turned on lathes with dull tools and were lacking enough sanding and stain, this Peugeot has totally smooth grooves and beads, and was sanded to a very fine and smooth finish. Just beautiful. Somebody there really takes great pride in his work. I looked underneath at the grinder mechanism and it was spotless and new, unlike the trash that was dumped on me twice by the people at Trudeau. It's hard not to just caress this thing in your hands like a beautiful woman. The curves...the smoothness...the attention to detail. Who would think that a pepper mill could be downright sexy? I'll have to see if this thing can be modified with a Fleshlight insert...but I digress. Since the teeth of the mill draw the peppercorns down into the mechanism as you turn the top clockwise, I figured it goes to reason that the reverse would be true. The first thing I wanted to do is see how finely it would grind. I thought that somebody might have ground some pepper in it before, and I wanted all of the large particles out of the grinding mechanism so it would be at minimum tolerances for the level 1 grinding. SO...I turned the pepper mill upside down, then turned the top counterclockwise, pulling any bits of pepper out of the mechanism to the inside of the storage compartment! This cleared the mechanism of all peppercorn pieces. Then I turned it right side up again. With it set on level 1, I commenced to grinding, and it made a really nice and fine powder. Not like flour or anything, but a very nice fine grind. What is that I smell wafting up to my nares? I then leaned close and gently sniffed the pepper aroma. Aaaaaaahhh...I'm in love. Then it was time to max out the size and see what that looked like. Nice, decent sized pieces, but not so big as to be obnoxious. I could see putting these on a steak and pounding them into the meat. I love the markings on the wood to select the grind size, and the Peugeot logo. They're tastefully applied and in a nicely contrasting brown color, not stark black. This natural wood is really beautiful and flawless, I could not be happier. I've never held a nicer pepper mill in my hands. These Peugeot boys have this s*** down. If you want a big wooden peppermill that looks great and puts out the perfect grind, look no further. I'm just giddy about it. People at work have been laughing at my excitement about a pepper mill. They don't understand. I'm not going to make them understand by transporting my treasured Peugeot to work, where some jackhole might drop it on a concrete floor or lose the nut off the top. They can keep their grubby mitts off of my U'Select. They can't believe I spent $90 on a pepper mill, but I'm the kind of guy who feels this way: if you're going to buy something you have to live with, make it quality. Spend the extra bucks to get great performance and value. It only hurts when you lay down the money. From then on, you're in paradise every time you use it. I also bought an OXO, which is a great little grinder, for guests, but they better keep their stinkin' hooks off of my Peugeot Paris U'Select, or they'll draw back nubs! I never thought I'd say something good about France, but Peugeot earned it! Five stars!!! UPDATE: I ate some fish, shrimp and basmati rice two nights ago, and it just didn't taste as good as the night before. Then it came to me at about 3:30 in the morning as I woke up from a dead sleep: somehow I forgot to use the Peugeot Paris U'Select to apply some pepper! This thing is amazing. I didn't think a 'nice' peppermill would make a difference but here we are. All the internal crushing mechanisms are made of stone and metal (not plastic like most other mills). The peppercorns grind very evenly, with multiple options for grind size at the bottom of the mill. I didn't think I would notice a difference but after cooking with this for months I have noticed how much more fragrant and delicious my pepper tastes. The only change I've made is this peppermill. If you feel like splurging a bit, and enjoy fresh ground pepper, I highly recommend this mill. ... show more

I bought this one to grind Hymalaya salt that I bought from Costco years ago. The plastic salt bottle with a grinder didn't work at all, so I bought this one. It seems to make salt powder more easily than to grind pepper. A good grinder.

This pepper mill was purchased for a present. The natural color is lovely; will complement any kitchen or table setting (why it was noticeably less in price than the dark wood, I don't know but I will take it). It has good heft and size. In terms of rating, only a half star would be removed if possible. The mill arrived in a plastic sleeve only in a bag mailer. There was no damage but don't know what would happen if roughly handled. Also, the mill was not completely filled with pepper corns, only a small amount. Come on! For as nice as this mill is it should come filled to the brim. I would purchase this again. ... show more

This pepper grinder sits on our counter near the stove. We use it most every day. It has a dial so you can select several different grind size options. Works well after 4.5 years; just wish the largest diameter grind was LARGE. The largest diameter grind is definitely not large and that was my main hope it purchasing this. Family members have cheap plastic grinders that grind larger diameter size and that is disappointing. We love the natural wood look. We use a metal funnel to help facilitate refilling with organic black peppercorns. What inspired to seek out a nice pepper grinder? We were eating at King's Tavern in Natchez and our waiter used it at our table. I fell in love with large peppercorn pieces fresh ground. Spicy! Fragrant! Prior to that we had a plastic one with fine grind that was given to us for our wedding in 2000. Pros: Sleek, easy to use and refill. Cons: Large diameter grind is not very big/large ... show more
