I can't believe how good this tastes. From what I've heard it's not a good idea to heat it. It's more of a finishing olive oil. BUT, i mean wow. I don't think I've ever tasted an olive oil this good. Used it in my salads and just on bread or to finish pasta. DELICIOUS!!!!!!!!

Found this from an instagram post and was dubious of how good it was going to be. Tried with a piece of crusty bread and WOW! Amazing flavor, amazing taste of olives, the trees, the sky, the sun....hard to describe but unforgettable.

I'm not a olive oil expert but I do know what tastes good. This is no ordinary olive oil. It has a robust peppery (almost spicy) taste that will makes your taste buds happy. It's smooth and well rounded. I've drizzled it on my pasta with roasted tomatoes, freshly grated parmesan cheese and oven roasted garlic. It was magnificent. I've also used it to make homemade hummus and also a delightful vinaigrette for my salads. What I haven't done is to expose the olive oil to too much heat by using to sauté in a pan. Nothing wrong with that but I feel that would change the taste of this fine oil.

Yes, this olive oil is different from any others I have tasted... and that is becasue I don't know all the differences and nuances and notes that others look for in olive oil. I can only pretend to be a snob (said endearingly). The whole feel of the total packaging is lovely and put together, as well as educational. THe makers really do care about their product!!! This olive oil really does taste different. I wasn't really sure about this olive oil, even after reading everyone else's five star reviews. Yes, it has a peppery bite. I never had a lingering taste in my mouth after trying olive oil, other than it dissipating. I was tasting something kind of green, kind of antiseptic almost, and then the pepper. I had to keep licking it. Ha! I tried it on bread, same thing. I wasn't hating it, I was just trying to figure it out... was there something wrong with this, or was I being introduced to something new??? Then I sautéed some mushrooms and garlic with it, in a cast iron skillet, and I enjoyed that very much. The peppery flavor blended in well. I can chock my not figuring out this oil out to me being more of an olive oil whore, rather than connoisseur, meaning, I will use just about any oil as long as it is not rancid. Although this was different, there was nothing spoiled about it. I am sure my buds will acclimate.
