The author explains the process of fermentation from the basis of a College Chemistry Lab. This is the most thorough book I have read to explain the processes and how you can control them. Don''t let the "College Chemistry Lab" scare you if you have never had chemistry. He breaks down chemistry until even a novice can understand the concepts.   • Very thin
I would not waste your time. This book skims over making beer, cheese, bread and wine and has less information than a reasonable google search. No useful images, or recipes. It's readable but don't get it if you already know anything about any of these subjects.
