I have own every brand/ kind of loaf pan for my sandwich bread and pain de mie. I must have at least 30 different pans. I even tried the more expensive Mafter blue steel pans ( wonderful but high maintenance) , but I like this one this best. The bread slides out easily every single time. There are no crevices where crumbs can collect, (clean up and maintenance is so easy) and best of all it doesn't over brown the crust on my pain de mie even if I use oil. Before I had been using parchment paper to line my steel USA pans (my second favorite) to keep the crust light as possible. Skipping that step saves me so much time. I know some bakers just wipe out baking pans but I like to wash my pans especially if I use oil or a filling. The pans are marked on the bottom for capacity which I love. I get an impressive mushroom top rise with these pans. I have two 800 gram (1 2/3 lb.) pans and I just ordered the larger size 2 lb. size and the next smaller 1 lb. mold. I am going to order the sliding pullman tops so I can make pain de mie. I highly recommend these bread molds. ... show more
