The biggest benefit to cabinets capable of both holding and proofing is their versatility. They're capable of holding cooked foods at safe temperatures until they're ready to serve, and the proofing mode can finish up the baking process. Our holding and proofing cabinets are built with durability, mobility, and efficiency in mind. These Kratos Holding/Proofing Cabinets feature 1.5" clearance between pan slides for easy loading, and they have an LED display for quickly monitoring interior temperatures. Each of these Kratos cabinets can hold products between 80 and 185°F, and they can proof between 85 and 115°F with a humidity range of 30-100%. The heating drawer can be removed easily for efficient cleaning and maintenance, as well.
