This pasta roller/cutter is easy to operate, but because the directions are somewhat lacking, it might take some people more time than others to master. If you've used a pasta sheet roller before and/or have previously made pasta dough, you will likely get excellent results on your first try. Others may need to figure out things such as the proper pasta dough consistency, the laminating process (more on that later), and desired thickness. This roller can make both flat sheets for stuffed pasta and lasagna and two shapes of cut pasta -- fettuccini and squared-edge "spaghetti" It does not mix the dough for you, and it is not an extruder, as the other pasta maker that shares this page is. This red machine only rolls the pasta to your desired thickness and optionally cuts it into only one of two flat noodle shapes. The included "adjustable" pasta cutter is awful. Buy a separate pasta wheel. The included egg pasta recipe is a great place to start, although the instructions don't give you any idea about consistency, which is the most important aspect of making homemade pasta. Because the recipe is simplified for Americans, it deals with cup measurements, not weight, for the flour. I used 00 flour, and I found that I needed to add two more egg yolks. All-purpose flour may not need that extra moisture. You want a pasta dough that holds together but is not sticky or moist. Judging the right consistency comes with experience, but it can be frustrating to beginners. I recommend doing some research before you begin. The included instruction booklet does not give any other recipes. Although the instructions touch upon the laminating process, they use a highly simplified version by telling you to run the dough through 2-3 times at the widest setting. True lamination helps the texture of the final pasta and shouldn't be ignored. You will want to feed 1/4 of your pasta dough recipe through the largest setting, fold it like a letter going into an envelope, and feed it back into the machine in the opposite orientation than the one it came out. Do this three times before beginning to progressively narrow the sheet. For ravioli, I finished it with the second-to-highest (that is, the second-to-thinnest) setting, and I used the setting just below that for fettuccini Have semonlina flour on hand to dust the pasta to keep it from sticking. Regular flour gets absorbed too easily. The on/off button is somewhat difficult to operate because it is under a bubbly plastic cover. But once I got this machine going, I was able to make a whole recipe of pasta in almost no time. You do have to remember to turn the roller number back to one as you start a new sheet -- it's easy to forget. As long as you don't expect to make shaped (that is, extruded) pasta, this machine is great. I have the Philips extruder pasta maker, and while it mixes the dough and extrudes the pasta dough on its own, it cannot make as good a flat sheet as this can. Because the sheets are 6" wide, they are the perfect size for two rows of ravioli. The build quality is excellent, with a strong motor and heavy-duty metal construction. Especially if you've being using a hand-cranked pasta roller, you'll likely love this. The learning curve is real, but it isn't steep. It makes a great companion to my Philips pasta maker, although I also would have been happy with this as my first pasta maker. -- Debbie Lee Wesselmann

My family has been making ravioli for generations, and my grandmother used a hand crank machine to flatten the dough. We've all used the same machine for decades, and this is a life-changer! I actually also have the Philips pasta machine where you just dump everything in and is spits out pasta, but that's not very friendly with gluten free flours. This, however, is great with whatever flours we use. It doesn't do the fancy stuff, but makes the flat sheets for ravioli perfectly and also does fettuccini and spaghetti. You can also use the flat sheets to make tortellini and farfalle. Comparing this machine to the hand crank, this has been amazing - so much better for the arthritic older hands, especially, and the kids love not having to work so hard with the hand crank, too! Comparing to my Philips, this is SO MUCH better for the flat pastas because I like the control of mixing the dough THEN using this to flatten and cut. If I want to make macaroni or other tube shaped noodles, I'll still use the other machine, but it really isn't great with gluten free. SO in a nutshell, If I had to get rid of one machine, it would be the Philips Pasta Machine and this one wins by far!
