Size: 8'' Kiritsuke Knife
This is a nice knife to look at. The stripey red handle, mosaic pin, Damascus patterned blade. The blade is constructed of folded metal; it's not just an etched design. However it does have a main central layer which is how you get an odd number of layers in a folded blank. That middle layer holds a decent edge and can be made nice and sharp. The knife is well balanced, but it seems to be achieved by having a lot of extra weight toward the handle end so the overall package is heavier than I think it really needs to be compared to other well balanced knives I have. Overall, I think the price is reasonable or perhaps a tad high. Right now a coupon is taking off a quarter of the price and in that case this becomes really good value. Several other offerings in this price and quality range are available so at that point it comes down to features/looks/design. Whatever blade shape, blade construction, and handle design/appearance you prefer is going to dictate whether this is the one you ultimately pick. Size: 8'' Kiritsuke Knife
I got this to have an easily identifiable knife for my outdoor kitchen that would thinly cut vegetables and potatoes and be equally useful for slicing meats (and hopefully for parting chickens) This knife does the trick for slicing. I have a a Henckel's 10" chef knife that I've had for over 25 years; I'm not sure this knife will last that long, but the price point is considerably lower. The handle is comfortable, but because it's 'polished' wood, it is a little on the slippery side with any kind of oil on my hands. The design on the blade is unique and quite beautiful. Out of the box, this is a very sharp knife. I hope that it stays sharp as the description claims; I'm glad it has a 15 degree angle, because that is the angle I'm used to when using a diamond steel on my Henckels. This knife does not (nor is it intended) to roll like a chef's knife, so it has it's specific purposes of slicing. I'm rating this a 4 because of the price; I think this is probably a quality knife, but a little too expensive (in my opinion) for an unproven product and it's limited intended uses (this is NOT a general purpose knife!). Hopefully I can come back in a year and give it a 5, and hope not to have to lower the rating. I'm just leery of all of the boasting in the description.   • Sharp and Really Well Balanced
Size: 8''Chef Knife
This is obviously a quality knife when you pick it up. Straight out of the box it was sharp enough to pass the shedding paper test. I have been happy to have it in my kitchen as it's my new favorite knife. I'm not so sure about it being true Damascus though. I haven't done the acid test to it, as I don't want to mess with such a nice knife. Just the pattern seems too perfectly well etched to have been formed naturally. I'm no expert though. I like the balance of the knife and that it's very sharp right out of the box. The size is smaller than other clevers I own and routinely use. I was disappointed that the Damascus layers are as subtle and faint as they are. You can barely see them and feel them (see pic).

Size: 8''Chef Knife
Loving the knife. Heavy Duty, 272 grams with what looks like a Carbon Fiber fabrication for the handle. Very Sharp right out of the box. Came with a Sleath cover to protect the blade if you put in a drawer or the countertop. Unfortunately I don't have a Magnetic Knife Strip, so it gets put back in the box it came in which is a really durable thick cardboard box with magnets to keep it closed. Knife box was damaged a little during shipping but nothing bad. Knife had Plastic bumpers on the tip and bottom of the knife to protect it while in the box. I used the knife so far to Slice Taters for making Mash Taters and used it to slice Home made Egg noodles, and it sliced through these with ease, So sharp it skinned my finger nail as i didn't have my finger tucked like I usually do since my other knives aren't worth anything, never hold an edge, always sharpening them etc. So i think this knife will replace all the other same styles, or I'll keep them around for the ole lady to use cause this one will be mine to use on all things I need it to. Very happy with this knife so far. I'd recommend it to anyone needing a knife of this style, Heavy duty, Durable, Easy to use, Got some weight behind it. When money isn't so scarce, I'll more than likely be purchasing the other styles in this series. ... show more

Wow! This Knife is absolutely beautiful and man does it cut like butter! I was needing a knife at home mine was getting dull and sharpening it 100 times was getting to be to much. So I ordered this hoping it would be better and it exceeded my expectations it was extremely sharp straight out of the box. This knife looks very well made and very professional. I can tell it is going to last me for a very long time. The handle fits nicely in my hand and is very comfortable to hold its not heavy.   • Great santoku knife!
Size: 7''Santoku Knife
I haven’t used a santoku before, but am really enjoying this one! I watched a YouTube on making the most of a santoku and the difference between it and a chef’s knife and that was enough to make it a quite useful addition to meal prep. I sliced and onion more uniformly and thinly than I think I’ve ever been able to before and am able to chop a bit faster and more precisely with it. Food like avocado sticks a bit to the blades, but not too bad. The knife itself came in a very nice package and with a little sheath to help protect the blade. It’s a pretty knife with nice detail. It didn’t seem very balanced to me, but my hand hasn’t fatigued while using it and I feel like I have good control, so perhaps that would bother some more than it does me (or perhaps I’m just not very good at finding the balance point.) In any case, I would recommend this knife and am glad I have it! ... show more
