Description

The slightly longer curved ergonomic handle provides a comfortable grip and features 7 signature black dots which represent the 7 Samurai codes of honor and moral principles. The beautiful hammered finish applied to the patented Cordova 18 core (Chromium, Molybdenum, Vanadium and Carbon) produces air pockets which help release food while cutting, giving the blade non-stick properties. Legendary industrial designer Komin Yamada brings a new age of innovation to Global cutlery with Sai, unifying function and design, these distinctive Japanese knives combine revolutionary ergonomic handles with triple-layered steel blades that maintain their exceptionally sharp edges. The first new cutlery line produced by Global in more than 25 years, Sai blends the Japanese company's tradition of craftsmanship with modern technological advancements. The knives combine three layers of steel: a core of patented, ultra-hard Cromova 18 Sanso stainless-steel alloy and two outer layers of more flexible 18/8 steel for added strength and resistance to rust. Professional-quality blades are ice-hardened and tempered to increase hardness, resist corrosion and maintain long-lasting sharpness. Each blade is hand-hammered to create hollow air pockets that reduce drag, allowing the blade to glide through food without sticking. 12.5-degree blade edge is mirror-polished by hand for exceptionally long-lasting sharpness. The perfectly balanced handle has an ergonomic thumb rest for a smooth, efficient cutting motion and steady, comfortable grip. Made in Japan. High tech from tip to handle, Global knives from Japan created a sensation when they burst onto the world's culinary stage as an alternative to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor-sharp. Although Global's original knives have thinner blades and are lighter than traditional European-style knives, Global also makes a heavier-weight line for cooks who prefer hefty cutlery--like this 8-inch vegetable knife, whose broad blade is as thick as a traditional European knife's and is ideal for precisely slicing and chopping vegetables. Global also dispensed with bolsters on most of its knives, including this one. Most Global knives have hollow handles, but the handle on this knife is solid. Stainless-steel handles are Global's most striking feature. They're molded to fit the hand and dimpled to resist slipping. Smaller around than many European-style handles, they're easy for small-handed cooks to grasp and seamless for sanitation. Global recommends using a ceramic sharpener or a diamond steel instead of a metal sharpening steel for its knives, supplemented by a synthetic whetstone, a ceramic whetstone, or a Shinkansen sharpener. Global also makes a Sharpening Guide Rail so blades can be honed on a whetstone at the proper angle. Global knives should be hand washed to protect edges. If your looking for a heavy chopper this is it. Makes carrots acorn squash or any other heavy vegetable that’s hard on your normal other knives a breeze and the added weight makes it less effort in general.

  • Great knife but not a classic Nakiri
This knife is part of Global’s forged line, which is thicker and heavier than their other knives - more akin to the European brands than Japanese cutlery. As such, this not really a true Nakiri, which is a thin, lightweight knife with a mostly straight edge. This GF-36 is thicker, heavier, and has curve the length of the edge. It’s a sort of a heavy-duty Nakiri/Santoku. It’s a very useful, high quality knife with great ergonomics, but if you want a classic Nakiri, this isn’t it. ... show more

  • Big sturdy Nakiri
Most Global knives you see in stores are G- series. This is from the thicker GF- series, that is intended for heavy duty use and seems to be only available online. The weight is between Japanese and German style knives. The blade's thickness tapers nicely from the handle to the tip. Also, the spine of the blade is rounded and feels good in a pinch grip, which is worth the price of admission by itself. The shape of the handle is excellent. Compared to most Nakiri that are 6 to 7 inches long and very thin, this is a rather large and substantial knife. I've owned mine for years, use it hard and have never chipped it. The shape of the tip is more useful than the more rounded style seen on many other nakiri knives. ... show more

  • A monster knife
Wife saw Pioneer Woman using one of these to chop her veggies, you know for Ladd and the boys on the range for their gourmet slider lunch break, and that's it our knives all of a sudden are inadequate. Admittedly I'm no chef, but she is a great cook, and she was right this knife is the bees' knees.   • I LOVE THIS KNIFE
The first time I used this knife, I knew from that second that this would be one of the most treasured items in my kitchen. I LOVE it. I have Henckels & Wusthof knives, but this knife is by far the best. When I prepare a meal, my favorite part is when I get to use my knife. I cannot possibly express to you how truly wonderful this knife really is. Buy it! Buy it! BUY IT! You won't be sorry (except when you aren't paying attention and cut yourself)! I only wish I had the money to purchase a whole set; I will one day... Update: I also purchased the "Global 10-Inch Diamond Sharpening Steel" and WOW - it's amazing. If your knife is a little on the dull side, run it over the sharpener a few times, and BAM! It's as sharp as it was when you bought it. Simply amazing. ... show more

  • Favorite knife!
This knife gets the job done. Period. It glides through all sizes, types, different density vegetables effortlessly. I love using this knife, and reach for it more than any other knife. My Global chef's knife just doesn't get much action anymore! I love how it feels in my hand, the weight of it, and the ease of use. Makes chopping fun and effortless.
