5 Stars to Carolyn for this great, "how to", for Freeze Drying, best printed book on the subject, I've seen so far. Freeze Drying is new to the average person the last few years. We all learned results were amazing yet wondered a lot in trial and error. I probably started close to the time Carolyn did and there was a lot to learn in the sense of variety of preparations for food, short cuts, details of the machines, once freeze dried then what and the list went on. She's covered it all and in a very organized fashion and a beautiful know all for Freeze Drying Book. I almost canceled the order 3 times as the wait was long, first printing coming out on Amazon about 3 months and then delayed, but I had faith in Carolyns youtubes, she'd have an amazing book and she did, glad I held out and love the book. It's huge, and beautiful, the work had to be a longggg project in making and well done. She's a great step by step teacher and with lots of answers for questions. Lets face it she's a mom of 11, she answers questions and teaches daily. Anyone wanting to freeze dry, this is the BOOK of the Decades for the subject. Check out her Chapters, amazing break down of everything. Back in the day as a rural farm girl, we would have said this got a 4-H Blue ribbon it is done so well. Would also make an amazing gift for anyone interested in Freeze Drying. Thanks Carolyn and to all that helped you. Your family is amazing, real and we're thankful for you and sharing.   • Encyclopedia of freeze drying produce.

If you are a gardener with a Harvest Right freeze dryer and your goal is to know how to freeze dry mostly individual produce items as opposed to whole meal items, this book is a superb resource: an encyclopedia of how to prep produce for freeze drying and how much to load per tray. If you are mostly interested in recipes to make freeze dried meals, you need another source to go with this one, because this is not a recipe book. I have found this book to be an excellent resource for just what the title says: preserving the harvest. I have been canning and freezing food for 30+ years. Freeze drying is an efficient alternative to those methods and is becoming my preferred method of food preservation for a large portion of my garden and also for a few things that I ordinarily would not be able to preserve effectively by any other method. ... show more

This book is a game changer for anyone learning to freeze dry or even seasoned freeze dryers. It gives you a lot of information on all kinds of vegetables how to prepare them to place them in the freeze dryer times that it takes to freeze dry them and how to rehydrate this book is excellent.   • Decent but not quite as helpful as I'd hoped

I think things have changed so much with the machines & industry that even with buying this book, I have questions & desire directions that just are not provided here. She does give good info, which is what earned it a 4 star! But I think if it were more specific on using the machine, it would have been better for me. I needed to just jump in with my machine & couldn't find some info I was looking for - like more understanding for why to change the settings in the beginning & what they meant when you did. ... show more

I wish this book had been released before I ordered my freeze dryer because I definitely would've ordered the large. This gave me the boost I needed as someone just starting out in freeze drying. I'm not new to food preservation, but freeze drying has some nuances. "Freeze Drying the Harvest" helped me begin to learn several small things I wouldn't have known--things that make a difference and could've caused me to ruin some batches. Some examples: how to handle foods with small seeds, which vegetables need blanching, and how to pre-treat specific foods for optimum appearance, taste, and shelf life when freeze drying. This book is a combination instructional and encyclopedia discussing the science of freeze drying and the specifics. It's very high quality, and though I've been paring down my cookbook shelf because today's default is to find recipes online, this book has earned itself a spot on the physical shelf right next to the Ball Book, which is pretty much the holy grail of food preservation in my opinion. Already, in the short time this book has been out, I've reached for it several times as a guide to fruits, soups, and other foods I'm preparing or currently freeze drying. Carolyn Thomas' book is valuable if you're beginning in freeze drying. ... show more
