I had been wanting to try one of these ham makers, then I saw this Deli Meat Press & Lunch Meat Mold (ham maker) and jumped on it, so excited. I was even more excited when it arrived. I was like a kid on Christmas morning and ran to the store and grabbed some chicken and tender steak. Then, right away, I started testing it out. My first attempt wasn't the best, mold-wise, lol. I didn't use a bag, so it wasn't easy getting out. Some of it was a hack job, and I should have pressed the meat more. I also should have chilled it in the fridge overnight, but I was too much in a rush to try it out, lol. But on the second attempt, I used a bag and blended up chicken, compressed it as much as I could, and again with this maker, and it came out great. I was very impressed with how well it did. Well-made, durable 304 Stainless Steel, with a Visual Window and a thermometer so you can keep an eye on the temperature. It also comes with 20 Cooking Bags for your cold cuts and storage. This meat press is easy to use once you get the hang of it. The first time, almost everyone messes up somehow, but that's part of being human and learning. Good size press and really easy to clean. I was really excited to try this lunch meat maker because I love the idea of making healthier homemade deli meat and cold cuts without all the extra additives from store-bought options. Overall, I think this is a pretty solid unit, especially once you get the hang of it. The setup was fairly simple, although it did take me a few tries to get the top attached correctly while keeping the spring straight so the press stayed even. Not difficult, just a little fiddly the first time around. One thing I ran into was my stock pot being too short to fully cover the press with water up to the level where the meat sat inside the container. The instruction photos actually showed a similar pot, so I assumed it would be fine, but I believe this is why it took almost 6 hours for the meat to fully come to temperature. I’ve since bought a taller pot and plan to test it again. I’ll update my review later if that solves the issue. The unit comes with plastic cooking bag liners, which many people will probably appreciate for easier cleanup and removal. Personally, I avoid plastic whenever possible, especially for long cooking times in hot water, so I chose not to use them. Without the liners, removing the meat was definitely more challenging — but not impossible. If you also prefer avoiding plastic, just know it can be done. A butter knife helped loosen the edges and made removal much easier with a little patience. Once removed, the meat held together fairly well and sliced nicely. I do think next time I’ll spend more time pressing the meat mixture down to eliminate air pockets before cooking. That should help improve the final texture. For my first attempt, I used a mix of chicken thighs and chicken breast. The flavor was good, but the final result was still a little on the dry side for my taste. Next time I’ll probably try using only chicken thighs or turkey to see if that gives a juicier texture. Overall, I think this is a good product for anyone wanting to experiment with homemade lunch meat and healthier cold cuts. Somehow my deli meat came out tasting vaguely like thin sliced, refrigerated meatloaf. Not exactly what I was going for but I definitely don't hate it! I'm going to have to do some experimenting with different meats, seasonings, and cooking methods. For this initial round, I cooked this in the oven at 325F for about an hour and 15 minutes because I didn't have a pot tall enough to immerse the entire cylinder in water. I'm wondering if cooking it in water would yield a different texture? Anyways, the construction of the meat press cylinder and lid means you can indeed put it in the oven. No rubber or plastic parts. The size is really plenty large for what you probably need. It cooked 2 lbs of turkey easily. The clamps on the press plate where the spring attaches is the only part that is annoying to clean. Once I cleaned those little parts out, I put everything in the dishwasher. I didn't use the plastic liner for it because I'd like to avoid more plastic in my life, but if that doesn't matter to you then that would probably make it even easier. Overall, as a set for beginners, I'd say it's well worth the money. Especially if you're someone like me who eats a deli meat sandwich almost every day of your life.   • Works really well
I've been wanting to try one of these deli meat presses for a while now, so I was very happy to have the opportunity to try one of them. Overall, I am very impressed with the quality of the product. It was very easy to assemble and use. I was able to find many recipes online for various projects, and I decided to try making some cuban pork deli meat, and it came out really nicely. It is very easy to put the bag in place to keep things neat and clean, and then to assemble the spring lid on top and push it down with the locking lid. It does take a bit of a push to get it in place but once it is on it stays locked nicely and the thermometer fits perfectly in the center. Then you just put the whole thing in a pot of water and cook til done. Easy peasy. After that, I let it rest for a bit then put it in the fridge to cool properly. When I took it out later, it was all nicely packed and solidified and easy to slice. We really enjoyed our sandwiches knowing that we knew exactly what went into the meat and are able to control the sodium levels and keep all the preservatives out and whatnot. I'm very happy with this and will save a ton of money on deli meats being able to just make them at home way cheaper. ... show more

I wish there were some starter recipes or recommendations included with it. Construction is sound. A slight magnetic attraction starts at the bottom of the vessel and increases as the magnet approaches the rim. The spring and pressure plate and thermometer have very low magnetic attraction. I went looking for recipes and discovered there are many sizes and styles of home-style deli meat makers. This one is much like the others. I decided to create my first batch with ground turkey reasoning that turkey is inexpensive, already ground and is easier to spice than other meats. However, recipes were harder to find. Several University web sites had some of the best recommendations. I used a recipe that calls for a 'cure' such as Morton's Tender Quick. The recipe called for 1-lb of ground poultry and gave the details. I mixed it up, chilled it over night in the fridge and cooked it the next morning. From 38°F to 166° took about 1:40 hours. Cool down in cold water for 1/2 hour and finish chilling in the fridge. The size of the sandwich meat maker is better suited to batches of 2-lbs. The thermometer probe barely penetrated the 1-lb loaf I was making. To accommodate the smaller loaf, I placed a metal canning ring under the loaf to raise it enough to keep the thermometer accurate. Once, I replaced the evaporated water from the cooking pot. It helps to have hot water on standby rather than add cold water. I cooked the loaf in one of the plastic bags included with the kit. The bag leaked or overflowed so that gelatin from the meat settled in the bottom of the pot. I won't use the bag next time. The final product has a texture and taste of canned corned beef. I can think of a few recipes with canned corned beef and I'll start by utilizing in that way. And now that I'm familiar with the process, I'll experiment with different recipes.   • In Home Deli, the real deal!
This is a product that I have wanted to try for some time. I finally got my chance and I am not disappointed! I already have a meat grinder and a meat slicer. This was the last component I needed to have an official in home deli. I appreciate the little recipe book that gives you a head start on what products you could make with the press. However, I opted to go with tried and true recipes from the internet. For my first use I made a basic pressed ham. The press comes with some little plastic bags, so I opted to use one for my first try to have a smooth process. I found it easy to fill and stuff with my meat. Putting the lid on did take a little assistant from the hubby, but it could be because I have arthritis in my hands. It did take several hours for the meat to come to temperature and then cooled to remove. Removal was satisfying and easy. Because I opted to use the bag, clean up was a breeze. Just simply washed with soap and water. In the end, the ham I made was "mid". I think that is because I'm so use to preservatives and artificial flavors, I need to get use to "natural" flavors. I plan on trying turkey breast next. Tip: ground your meat into a smooth paste, almost make an emulsion of your meat, if your looking for that smooth deli meat you get at the store.
