I purchased this to replace a cheap, smaller mandoline, primarily to be able to slice large russet potatoes lengthwise, for making Thomas Keller's potato pavé. The extra size makes the job easy. Benriner is the professional standard, and considered the best mandoline available, even better than more expensive European models. I haven't experienced anything to dispute that. However, the thickness adjustment could be better. 1) when turning the knob to lower the platform (to make thicker slices), the platform may not move - you have to push it down; 2) the knob only presses against the platform at the center, which means the ends are free to wobble a bit, resulting in ever-so-slightly uneven slices (still way better than tilt-platform mandolines though); 3) because the knob turns smoothly, as opposed to having detents, it's very difficult to get the thickness you want without a bit of trial and error (I compare the position of the platform to holes in the inner sidewall to estimate the resulting thickness, but even that doesn't seem to work 100%). Although it would increase the cost significantly, some kind of geared mechanism with detents, made of something more rigid than plastic, would make this mandoline just about perfect. ... show more

This is the mandoline I have been looking for. Others just are not sharp enough. This one is very sharp so it actually slices food well. Don't waste your money on the other brands.

After purchasing and sending back a mandolin which was incorrectly described as much larger than it actually was, I was delighted to find that this mandolin was in fact, much larger than a regular size one. It was perfect for slicing my jicama slices.

    • It’s a legend for a reason

I attempted to purchase on the American Amazon site through their Amazon Japan seller. I was warned it would take 2-3 months to ship, but it was $50 cheaper from them. However, at month 3, I cancelled my order and paid full price to get one with 2 day shipping so I would have it for Thanksgiving. This thing handles produce with incredible ease and cut my fruit and veg prep time by at least 75%. The knob on the bottom allows you to adjust the blade to your preferred thickness. Attachment are relatively easy to change and the blades are the sharpest I’ve seen on a mandoline. I do recommend getting some anti-cut gloves to use because these absolutely would cut through fingertips with incredible ease. If you’re on the fence about getting this due to the price, I’m here to tell you it’s worth every penny and then some. Best mandoline I’ve ever owned. ... show more

My review has nothing to do with the product performance. I never used it. I ordered the Jumbo slicer, model BN-120. I expected it to come with extra blades for making julienne/matchstick vegetables. But the Jumbo only comes with one regular blade for slicing. I was confused by the other models and photos that show multiple blades. It's only after I received the item, did I go back to the description and realize that the extra blades are not included with the Jumbo model. Again, the Jumbo model only slices and will not do julienne/matchstick style vegetables. Although I never used the product, I was surprised to see that the prongs on the underside of the food holder are plastic (just like the holder itself). Most food holders I've seen have metal prongs that hold the food in place. Again, I never tried using the product. So maybe the plastic prongs aren't an issue. To adjust the thickness, you rotate a knob on the bottom side of the slicer to the desired thickness. While doing this, you need to push down on the platform. Otherwise, the platform won't move by itself (the instructions mention this). When rotating the thickness knob, there are no "click stops", markings, or other thickness references. Therefore, determining the correct thickness is a matter of trial and error. Overall, I'm going to look for something else. It appears that Benriner doesn't offer different blade types for the Jumbo model. And I want something that will do Julienne/matchstick slices. ... show more

I had wanted one of these for years! I have a quibble, though, which is that the mechanism that adjusts the blade height (or should I say, the slicing surface height) braces the slicing surface only on one side. But this isn't enough to hold the other side firmly in place, and it can slip slightly. Upshot: most wider slices (potato, beet, wide veggies) are not a uniform thickness. I'm OK with this as a home cook, and the variation is not huge. But after years of hearing and reading about the Benriner brand, this seems like too obvious, too easily fixable an issue to have let pass. ... show more

    • Sturdy and wider than others I've tried

Over the last few decades I've worn out a few plastic V slicers. Eventually they just crack somewhere, and there's no way to repair them. I decided to upgrade for this replacement, and so far I'm really impressed. The flat surface is nicely wide, the whole unit is very sturdy. I like the fact that you can adjust things so the surface is entirely flat, screening the blade and protecting you from accidental exposure to the blade when the unit is in storage. The plastic holder is very sturdy and seems well designed. Definitely well made, but I'm glad I got this one at a slightly discounted price. Overall, this is a much simpler unit, and yet it has a more sophisticated design than the other mandolines I've tried over the past 40 years. Easy to get the slicing thickness where you want it (though not preset), easy to clean up, and easy to store. ... show more
