  • Serious all-in-one kitchen processing system...for those who will use all of it's capabilities
The Vitamix Ascent X4 Smart Kitchen System can replace several small kitchen appliances and can do each job well. The question is whether you want or need everything in a single system or not. The Ascent X4 arrives in a rather large box, and there are multiple smaller boxes inside. It will take you more than a half hour to unpack everything and wash out the containers and blades before you can even use the thing. You'll also need to familiarize yourself with the device by reading some of the instructions as the box has several booklets inside. The system includes the heavy base, the blender container and lid, the food processor base adapter, container, lid, tamper plus holder, multiple blades, and a blade storage container. I actually though the blade storage container was some kind of smaller food processor bowl, but I appreciate they included some place to put the blades once I figured out what it was. Operation is fairly straightforward once you read the directions and get an idea of how the system works. There is a tiny screen above the main dial. You can scroll through several graphical icons that are fairly intuitive. Once you select the program, like Smoothie, you just hit the Play button and it will run the program. Some programs have timed alerts for you to use the tamper to push the food downward before continuing. You can also use the pulse button or the + button to add some extra time. You can also change out the disc blades depending on what kinds of cuts you are looking to make with your veggies, or if you'd like to shred something like cheese. There are finger holes in the middle of the blades that make it easy to pick them up and carefully place them on the blade holder in the food processor. It can be a little intimidating to use it the first time, but once you kinda see how the whole system works it becomes easier to grasp. The only minor annoyance is that when you are really blending something the base doesn't lock into one position, so it can slightly drift, especially if you pause and push things down with the tamper or a spatula. It's a very minor quibble, though, and not enough to even knock off a half star. Washing is about as easy as it can be for a system like this. You can fill the blender jar with some water and a few drops of soap, put it on the base, and run the cleaning program. That alone will take care of things and clean up most of your blends. You might need to hand scrub off a few problem spots, like blueberry skin bits that ride up the jar, but for the most part you can expect the cleaning cycle to do the majority of the work for you. The food processor is much the same, but I was careful to hand clean some of the parts were I was worried tiny food bits might hide. You just need to be extra careful not to cut yourself with those sharp disc blades. If you are comparing systems, there are small differences between the X4 and X5 systems. I haven't used the X5, but to me, it seems like the primary difference is nut-based milk processing. If you want an all-in-one system that will also allow you to make your own almond milk, then that seems to be the main extra functionality of the X5 over the X4. But other than that, the X4 is going to handle most of your needs. So for the careful shopper, it really depends on what you are looking for and what your budget is. The blender, food processing, cheese shredding, and veggie slicing capabilities of the Vitamix X4 are all really top-notch. But you will have to also pay a top notch price for all that functionality in one single unit that runs off one single (large) base. However, you can reasonably get a good blender, a good food processor, and a good chopper/slicer as separate appliances for probably an overall cheaper price and still be happy. So if you are only looking for a food processor, just get a good food processor. Same for a blender. But if you are looking for one unit to do all of those things, and do a good to great job doing all those individual tasks, the X4 should easily be at the top of your shopping list. ... show more

  • Makes the greatest hummus you'll ever eat
We were hoping this set would allow us to open up some room on our counter since the one base operates both the blender and food processor. Unfortunately, all the pieces are larger than the ones we use now so the space-saving idea is not happening in our kitchen. That aside, the blender is more impressive than I thought a blender could be. Vitamix advises starting out with recipes from the included booklet to get a feel for how it works. This is a good idea because it does operate a little differently than the blenders I’m used to using. It has a tamper which is used for pressing down ingredients while blending to make sure everything gets mixed up together. This alleviates much of the need to keep stopping the blender and scraping it down as I’ve had to do in the past. I was a little intimidated about using it, but if you select one of the pre-programmed recipes, a tamper icon will illuminate letting you know if and when it’s needed during the blending cycle. It also blinks on and off while you are using it to help you keep a steady rhythm. The pre-programmed selections are very helpful. They run the machine through the correct speed and time while also helping with tamper timing as mentioned previously. I think I saw someone mention that the machine will recognize what you want to make based on the ingredients you add. In my experience, that is not correct. You have the opportunity to select whichever setting you want no matter what you have in the blender. The plastic containers, lids, etc. are extremely thick and feel super durable. You can put them in the dishwasher, but the cleaning cycle program makes that unnecessary 99% of the time. I’ve mainly been sticking with the recipes that came with the machine. The hummus recipe is incredible. You use sesame seeds instead of tahini because the blender is so powerful it can blitz them into nothing. We’ve been going through a jar of chickpeas every two days because the whole family loves it so much. Some other hits have been the frozen margarita, smoothies, and a butter pecan ice cream from Food52. My other blender had a smaller attachment for smoothies which I wish this had, but they blend up great in the bigger container so it’s not much of an issue. I would recommend getting a blender spatula because it can be a little hard to get concoctions like nut butter out from under the blades. The food processor attachment is good, but I don’t love it like the blender. I was having an issue with it when it first arrived. Vitamix customer service was excellent. They diagnosed the problem and sent me a new part which fixed it. Still, even now that everything is working the way it should, it’s not knocking my socks off. Because it doesn’t lock into the base, sometimes it will move slightly so that the power stops and you have to resituate it mid-cut to get it going again. It operates at only one speed which makes it hard if you’re trying to chop things differently. The pulse button takes a while to master. It keeps going for a tiny bit even after you lift your finger off. The bowl of the processor is really big. I prefer having the choice between a little bowl or a big bowl you can change out depending on what you’re making. The lid is hard to snap on and off. Everything just seems a little more difficult to use than it needs to be. It works fine, but no better than any other food processor I’ve had. This set comes with a 10 year warranty, and my recent experience with the customer service department makes me feel very confident in that warranty. I’ve heard how great Vitamix is for years.
