I’m not a huge olive oil expert so I was not ready for the flavor profile that this bottle has. It is very strong as the item description states it would be. I love that it comes in a dark glass bottle but if being honest the flavor is not for our family. We are not refined enough for the rea stuff like this quality oil lol. We prefer a much milder flavor but this olive oil tastes and is exactly as described so make sure you like the bitter and pepper notes because they are strong and even burned in the back of my throat each time I used it. I gave it a four stars because it is as it says I am just not the type to appreciate the strong flavor profile. So you definitely need to be experienced in these higher quality batches to appreciate the flavor.

For may years I used Badia a coltibuono oil, which is still very good. But recently I discovered that this one is even better, although also even more expensive. The flavor is so delightful and memorable that I think it is worth the price. I also like how elegantly and attractively it is packaged (unlike the Badia). If you want an exquisite olive oil and can afford it, you cannot go wrong with this.

When I tried this olive oil, I was struck by how strong it was! It has a very peppery and nearly bitter profile. My husband tasted mostly hints of pepper. The oil even comes with a pamphlet warning that early harvests will have a pungent flavor. If you do any research on EVOO, the polyphenols advertised in this oil's listing are actually expected to be peppery, pungent, and strong. On the claim of being high in polyphenol and having that flavor profile, this EVOO seems to deliver! I believe the polyphenols are a big component of the olive oil superfood, so that is good. I think it should be very healthy. My family and I have agreed that this oil is going to be good for pouring into pasta and other seasoned foods to enhance their flavor. I do not think I would use this as a dipping oil personally. As with all EVOOs, avoid high heat, but it should be great for cooking and enhancing the healthfulness of your dishes.
