This review is about the large 20 by 15 inch board, which I have used daily for two years. The first thing you notice is the weight: it's nearly ten pounds. That makes it primarily a stationary board: although it can be carried, you will bring bowls and pots to it, rather than the other way around. The large work surface and stability offered by its weight make this my favorite board for chopping vegetables and large-scale cooking. (To minimize the need for cleaning, meats are processed on other boards.) I like it well enough that I just bought another for the parents. It is fairly well made, consisting of strips of maple well glued along their length, then cut to size, planed flat on both sides for two working surfaces, and rounded nicely on all edges. (Deep finger-holds are routed into both ends.) I say "fairly" because there is a problem that many have noticed: this board tends to split at the ends in dry weather. The reason is that wood expands and shrinks in response to changes in moisture. Wood consists of tiny straw-like fibers that tend to absorb moisture at their ends much more than elsewhere. Thus, this board responds to moisture changes primarily where those fibers are exposed in the end grain: along both short ends of the board. However, moisture is only slowly transmitted along the fibers. What happens is that the first inch or two at each end will quickly expand (when wet or in humid air) or shrink (when dry) *relative to the rest of the board,* which changes little. You won't notice the expansion: that just squeezes the ends harder together. But extra shrinkage splits the sections of board apart at the ends as they pull apart from one another. Mine has gaps that get as large as 1/16" across and penetrate up to 2" into the board. (A by-product of these moisture-driven changes is a slight curving of the board across its short length. This actually is good: by placing the convex side of the board up, you get a surface that works better for cutting because it lessens the depth of the hollows that are carved out after years of chopping.) Much of this splitting problem could be avoided if the manufacturer would glue up the board when the pieces are extremely dry and at their most shrunken. The solution is occasionally to soak the *ends* of the board in a pan of water during dry weather (winter, here in the US northeast). Within a few hours the gaps will close. Unfortunately, they open up again within days, so frequent maintenance is required if the splits bother you: that's the reason for just four stars. When moisture is not extreme--which for us is most of the year--applying a little mineral oil to the surface and ends once every month or two and letting it sit overnight before wiping off is all it needs. Once the splits close this spring, I plan to soak the ends even more liberally with mineral oil to reduce its moisture exchange with the air, but I am not optimistic that this will fully cure the problem. ... show more

Size: 20" x 15"x 1.25 Inch Style: Cutting Board
This is the second one i own of this size (20x15x1.25). The first one i had is over 2 years old with no visual signs of splitting. I have only used mineral oil about once a month to season the board. I have used it with raw meats as i know of the UC Davis study that shows you can use it for that purpose. I plan on using the second one to help speed up my cooking. I always make sure to clean after every use and wipe it down. I use the clorox (non bleach) wipes to make sure to kill all bacteria and use paper towels to dry it out quickly or a kitchen towel. When i will add the mineral oil i usually clean it with course salt and lemon then scrape it all off and add a few coats of mineral oil over night. This has been my routine these past years and has helped maintain this board thoroughly. I assume that those individuals that have had bad luck on the board splitting is unfortunate and i believe that if that happens you either need to add tons of mineral oil to make sure the wood doesn't soak water up to ruin the glue OR just got unlucky and got a bad board from a bad batch. I wouldn't switch brands as i know Boos block is used in foodnetwork as well and is quite well known so it has to be good, either way i'm sure there are few other brands that can work (Teakhaus). Update: 1/15/2018 This particular block is starting to crack on one side, and it has completed one full year while the first one i purchased still remains the same in quality with no visible splitting or cracking. I believe that some cutting boards are just not made the same way even if you purchase them from the same manufacturer. I believe its just the tree where it comes from is not always as good. This particular one that i bought was always a bit dryer even if i used a ton of mineral oil and butcher's beeswax as a finish every other month. ... show more

AT FIRST GLANCE:. The board arrived carefully packaged and in great condition. It was as lovely as pictured. PROS: The board is beautifully crafted. It's heavy enough to stay in place even during the most rigorous chopping. I did considerable research before making the investment and the board truly lives up to my expectation. CONS: In order to season and maintain the board, you must purchase the Mystery Oil and Board Balm and use it monthly (or more, based on use). It takes the board out of commission for 2 full days-- or more with heavy use. It is this extra maintenance that often has me gazing lovingly at my Boos board as I mince garlic on my maintenance-free bamboo board. RECOMMENDATION: Properly maintained, a Boos board is a "once in a lifetime" investment like high-quality knives. Be prepared for additional purchase of Mystery Oil and Board Balm in order to keep the board in good nick. I also purchased the Boos applicator, but a clean lintless tea towel would work just as well. Maintenance takes two days to complete and must be done monthly at minimum. ... show more

This is a medium quality board which matches its middling price between cheap imports and the premium models. Mine has a few gaps in the glue joints, we'll see if that becomes an issue. The overall finish is average and I've fed it a lot of mineral oil. The edges were barely rounded, almost sharp, and combined with the board's heavy weight could create some finger damage if dropped while washing. I rounded down all the edges with a few strokes of a sharp plane and some ~300 grit sandpaper. MUCH better. The round also makes it a little easier to pick up, and looks so much "professional". The heavy board doesn't move much, good for chopping or pastry/bread making. Hoping it lasts. ... show more
