Easily the sharpest, best knife I've owned for cutting veggies. Probably fine for meat, too. The thinness of the knife makes it glide through most ingredients. After reading “Kitchen Confidential” I became aware that all the junk metal thrown into a drawer I had been formerly calling knives were - at best - horrible. So I bit the bullet and ordered this fine instrument. It’s better that anything I could imagine. Sharpness out of box you could shave with. The lightless and balance are delightful. Took out an onion and it cut like warm butter. Order the two sided sharpening stone while you are at it; as thing thing you will use and fall in love with - it makes cooking more effortless - and cleans so easily. I don't normally take time to write a review, but this knife is fantastic. I'm no professional, but I do spend a LOT of time in the kitchen. This is a super sharp knife, but of course many are right out of the box, even your less expensive variety. I have been using the knife about 2 weeks now and just love it. It slices all my garden treasures with ease-- no special tomato knife needed with this gem. It goes right through them. I also cut into a butternut squash easily enough with this knife and have used it for just about everything since I've received it. Thinking of a 2nd Global knife now, but then again why? I think I pretty much have a wonder all-in-one knife with this beauty. I cut bread with it too (I do have a bread knife, but this thing slices everything nicely). I am a female with relatively small hands and it is comfortable, and feels like a good size/weight to me. Again, I'm no pro, but for an average, I like to spend time in kitchen person, I'm finding this a wonderful knife. ... show more
