Easily the sharpest, best knife I've owned for cutting veggies. Probably fine for meat, too. The thinness of the knife makes it glide through most ingredients. Cutting an onion with this is a pleasure. I haven't sharpened it yet, but it seems to hold an edge very well. It has maintained some good sharpness after several months of regular use. After reading “Kitchen Confidential” I became aware that all the junk metal thrown into a drawer I had been formerly calling knives were - at best - horrible. So I bit the bullet and ordered this fine instrument. It’s better that anything I could imagine. Sharpness out of box you could shave with. The lightless and balance are delightful. Took out an onion and it cut like warm butter. Order the two sided sharpening stone while you are at it; as thing thing you will use and fall in love with - it makes cooking more effortless - and cleans so easily.
