I use a lot of extra virgin olive oil. I have different quality ones for according to how I’m using it. I didn’t have one for dipping sauce that had the flavor I was seeking. This one is priced well and is perfect. It is also cold pressed which I read is important for a dipping oil. I was impressed with the flavor. I added some fresh ground pepper and fresh Parmesan.
