Right away, I was impressed by the contents of this kit. In addition to the cooking canister/press with meat thermometer, the kit also includes a silicone heat mitt, cleaning brush for the thermometer holes, cooking bags and instructions. The instructions were comprehensive, with a variety of recipes included. I started off following the ground chicken recipe from the instruction sheet with a couple small modifications. I added some chopped mild jalapeños, but couldn't find any thyme. The result was delicious! I made sandwiches with lettuce, tomato, mayo and horseradish sauce. The texture is much like meatloaf (which I love) but slightly more dense. It will be interesting to see how this changes by meat type but I was able to easily cut it into thick slices with a sharp knife. This particular recipe would probably not work for thin slicing in my estimation. The process was easy and straightforward. I put a thermometer clipped to edge on our stockpot to monitor the water, in addition to the one in the meat canister. This worked extremely well. I was able to occasionally wander over to the stove and confirm that the water stayed between 190 and 200 degrees Fahrenheit until the meat reached 180. The instructions say 160 but I think 180 is better. On a cool side note, I discovered that we can fit two of these meat canisters in our large stockpot. This allows for twice the production with the same work. The other handy thing about doing it this way, is that it keeps the canisters from drifting around much inside the pot. I have been wanting to try making my own deli-style lunch meat at home for a while, mostly because the store-bought stuff is loaded with sodium and preservatives. This stainless steel meat press kit gave me a genuinely easy way to do that, and I am happy with the results. The kit comes with everything you need to get started: the stainless steel press cylinder, a spring-loaded lid, five cooking bags, a thermometer, a silicone mitten, and even a small recipe booklet. The fact that they included a thermometer is a big deal for food safety, especially when you are cooking poultry. The thermometer reads in both Fahrenheit and Celsius and is easy to read. The process is straightforward. You mix your ground meat with your seasoning of choice, pack it into one of the cooking bags, load it into the press, close the spring lid to apply even pressure, and then cook it in boiling water or in the oven. Once it cools, you slice it just like deli meat. The spring lid keeps constant even pressure on the meat while it cooks, which is what gives it that firm, sliceable texture you are going for. There is some trial and error involved in getting the seasonings and cook time exactly right for your taste, which is part of the fun.   • Surprisingly I wish it pressed it tighter Surprisingly I wish it pressed it tighter
So I use this over the last few days for the first time. I have made a pork loin two days ago in the oven and I used Rosemary, thyme, and garlic and I put it pretty thick on top of the pork loin. The pork loin itself came out absolutely delicious so I thought I would take some of it grind it in my grinder and use it to make a lunch meat. So I read the directions and I: - ground up the amount that you supposed to grind up and the only difference is I was using meat that was already cooked whereas the directions on everything said to use raw meat ground up. But it did take a while for the pork to get up to the required temperature when I had it in the water on the stove. Once it got to the required temperature I didn't let it go too far I took it out I cooled it and cold water - I put it in the refrigerator overnight. - I did have issues with getting it out of the can starting with all the extracted fat from the meat. It brought it all up into where the coil is. And I wish it hadn't done that because it dried the meat out. The fat in the meat is what made it nice and tender and tasteful but now there was absolutely no fat. - I dug all the fat out first and still had trouble getting just the coil to come out. I didn't use a bag because I didn't want to have like seams in the meat itself. So now I got a pan full of hot water and I put it in the hot water to sit to loosen everything up. Eventually I got the coil out. Then I got the meat to come out after that. - When I went to go slice the meat it was kind of falling apart because there was no fat to hold it together anymore which is why I said I wish it had actually pressed it tighter but I actually did have trouble slicing it cuz it was so thick but as soon as you got sliced through it I kind of started falling apart - I haven't finished cleaning it yet because it was so greasy I put some Dawn and hot water in and I'm letting it soak a little bit first but I don't anticipate it's going to be a big deal to get it clean once I have it soaking then I'm just going to spray hot water all over that oil and hopefully that won't be difficult to get clean because I don't have a dishwasher. So I'm getting this four stars just based on the fact that extracted all the fat and I wish it hadn't done that. It could be different maybe if I used raw meat instead of me that was already cooked I'll see what happens the next time maybe pork is different because maybe it's because pork is denser I was going to try with turkey or chicken the next time they also had a recipe for salami and I wanted to try making that too. But it's a neat little Gadget and if you can do it it definitely would save some money at the deli and you're making fresh deli meat that has no preservatives in it and you know exactly what the ingredients are that you're putting into it. My mom used to make her own lunchmeat when we grew up using a large press. This press is much more compact: it's a cylinder with a spring on top and a thermometer. Basically it allows you to cook ham or other meats to temperature under pressure to keep them intact and solid. Then after it cools, you release the cylinder of meat and chill it for slices. Since it has no corners and you use a bag to cook the meat in, it's easier to clean. Comes with accessories: 1 meat bucket, 1 lid cover, 1 spring with a plate, 1 thermometer, 5 cooking bags, 1 brush, and 1 silicone mitten plus recipes. The press is suitable for processing about 2 - 2.5 lbs of meat. It says "ham" but you can use turkey, chicken, beef, and we used to use beef with tongue. The recipe book has recipes for salami, turkey and more. You would benefit by adding one extra accessory for maximum value and that is a slicer. Although you can hand slice the meat with a knife, a meat slicer makes thin slices that give a greater yield. I would also add long silicone mitts, instead of the pinch style mitt included. (I prefer whole hand and wrist coverage to avoid getting scalded.) If you shop meats on sale, the value is excellent and you can make your own sandwich and charcuterie meats with no preservatives. Once you get the hang of using this, it's pretty easy. The size is good because 2.5 lbs is not too large and the press will fit into a large cooking pot for the boiling stage. ... show more

For around $24, this is a surprisingly fun kitchen gadget if you've ever wanted to make your own deli meat at home. In my case, I love chicken bologna, which is nearly impossible to find where I live, so the ability to make it myself was a big selling point. There is definitely a bit of a learning curve. My first attempt wasn't exactly deli-counter quality, but after a little experimentation with recipes and cooking times, I got the results I was looking for.
