Description

Recipe W2 is another one of Octaaf Callebauts original recipes that has grown into many chefs preferred chocolates. This chocolate is as Belgian as can be, since it is mainly made with milk from cows grazing on Belgian pastures and sugar from locally grown sugar beets. It has a delightful taste with pronounced milky, creamy, caramelly and vanilla notes that are in perfect balance. W2 can be paired with a wide range of ingredients and flavours: from sour to bitter, from spices to herbs, and from fruits to beers. With its medium viscosity, this is a great all-round chocolate. Used in chocolate bars or hollow figures, it takes you by surprise with its lovely satin gloss and snappy texture. And fully rely on it to flavour mousses, cremes, ice creams, drinks, sauces, etc as well

I love the product but I guess i made a mistake in ordering chocolate during hot weather. The company placed the bag in a cool shield thermal bubble mailer to help manage the temperature but essentially the entire bag melted into a block of white chocolate. I have no idea how I am going to make small pieces of the white chocolate for easier melting/tempering. This was an expensive mistake. I just hope I do not get injured trying to use the product. This is good chocolate and the melting point is low. It should have a ice pack or something with it. The drive left it on my porch in the sun. Even though in big red letters it said perishable. Not sure who to blame here. At the price of this item it should be delivered in excellent condition.

Bag was just delivered, sealed and perfect. I've wanted to try the chocolate from this brand for months but I hesitated at first because the weather was warm, then holidays sapped my cash. I questioned the sanity of buying a 5.5 pound bag of chocolate chips (well, ok, 3) but it doesn't seem nearly that daunting with the package in hand, particularly not after I've tasted them.
