These are the steps I use - hope this helps with people struggling with this. #1: While this says it's a 4 cup espresso maker, it's designed to make a single 6oz serving. Don't use this like a traditional Moka and fill it up to the pressure valve - if you do you will create a lava flow of coffee/crema pouring out the top of this. 170ml, it's all the water you need. Don't worry if it looks like it's nowhere near enough - it's plenty. The way this makes crema expands the volume the top section has to catch. --- #2: Preheat your Moka pot with boiling water, and your cup with boiling water. The former means you don't need to wait a long time to get the brewing process started, and the latter means when you are ready to pour it - your cup is already preheated. --- #3: The most important step. You want to pull this off the burner IMMEDIATELY once you start to see a steady stream flow. Did I say IMMEDIATELY? Yep. The pot is already hot enough to finish the brew. Then, take it to the sink and once it gets close to the sputter stage (you'll know by how much is in the top section - or after making a couple pots when it's about to start sputtering out) put the bottom pot under running cold water. You want to cool this off to stop the perculation. If you don't you'll get some rather unsavory bits of the end of the brew in your cup. --- #3 should only take you 1 or 2 tries to get the timing right - and it's critical to a good cup of joe. I use Death Wish Coffee - Dark Roast - 100% Arabica. This should normally not give you much if any crema. With this, there is about 1/4" of golden brown crema on top. 6oz of bliss to start the day. Lastly, if you follow the preheat instructions you have plenty of time to clean the pot before you enjoy your cup of joe. I use a 6oz stainless steel cup - it's still piping hot after cleaning and putting away the pot - and the crema is still waiting for you. If you want more (i.e. weaker) coffee from this, just dilute what you have with water/milk. All putting more water in the pot is going to do is make a great big mess. ... show more

  • Nice Shot Of Coffee

I like the flavor of the coffee. Strong and bold with a dark roast. You have to pay attention when brewing so you don't burn the coffee. I take it off the heat once it's almost completely done. Takes a few times to get just right, but once you do you won't have any bad cups. I find it hard to get the filter holding the grinds out to clean and empty. But that is part if design. It is flush with the bottom tank so that a complete seal is made and holds. I got the feel for it after a few uses. To be honest, I would have to say I rather my espresso machine coffee taste. Much smoother. Much this little pot does make a great cup of coffee for a different flavor. ... show more

  • Creamy Crema, Is On The Way

I bought this for the crema, and at first was disappointed, until I did what anyone worth their weight in the kitchen does - experimented. If you like thick and creamy crema, do this: - Get a real fine grind on your fresh beans. - Pour some clean filtered water up to the line etched into the metal, no higher. Or use the measuring cup, if you’re a sissy like that. - Now, here we go. Things need to start heating up on a low-ish flame. Take a few minutes to grab your cup. Watch her heat up slowly, and come back you hear the coffee starting to flow inside. Watch it enter the chamber, it’s meditatve! Now…pull her off *before* she “finishes”. You’ll see when that crema is thick, and you’ll be tempted to leave it on there, rubbing your hands in a fit of “more is better”. But this baby likes just a little less heat, and you need to get her off that flame right before she erupts. Follow my advice, and you’ll taste the work of a roman barista in every cup. ... show more

Used espresso ground coffee from café bustelo, 120 mL water (cold). Takes about 2 min 30 sec on an electric range (I did allow the range burner to warm up). Great crema, better than an espresso machine I had. Agree w ppl that this isn't really espresso but the flavor is far better than drip coffee (to me). Disagree that this thing rusts. Clean w water and a rag, no detergents, no soap, definitely don't put it in the dishwasher. Clean it after you pour if a tiny discoloration bothers you. Great coffee, great value. ... show more

  • Watch out for too high of heat

I love our new Brikka Moka Pot. But, you really have to watch the heat on this version. I've had the standard moka pot in the past. In selecting a replacement I was attracted to the Brikka version based on the quality crema claim. Indeed it does a great job, but if you have the heat too high, it will "boil" over and create a mess on your stove top. The Brikka version has a large hole in the lid (whereas the regular pot does not). Presumably that is to allow air to be drawn in to create the crema. But, if the heat is too high, that hole allows the coffee to boil over and create the mess. What I found using our gas stove top is that you need to keep the heat a bit lower and turn it totally off as the upper tank begins to fill up. It will finish fine and create the crema, but it usually won't boil over. It takes longer, but the taste is worth it. ... show more

I had to go a bit coarser with my grinds than I do with my home espresso machine, but that is to be expected.   • Know what you’re getting

It doesn’t produce what I would call an espresso shot, but neither is it coffee. It produces something that’s in-between, and tastes quite good when used with fresh beans, especially if mixed into a latte/cappuccino. The preparation and work involved from start-to-finish, about 7 minutes, is what is appealing to me, and I personally feel this gives me the perception that it tastes better than other, more automated methods. It gives me a feeling that I have some control over the outcome, and sure enough, small changes in preparation will result in a different taste, such as coarseness of grind, spread vs. light tamping, quantity of water and temperature, intensity of the burner, etc. Plus, the sound it makes is just amazing—l call it purring, and it prepares my taste buds for something special. ... show more
