You can smell and taste the difference in this fine extra virgin olive oil. I just received this a couple of days ago, and the same night I made a large batch of crostini (with baked fresh baguette slices) for several different bruschetta spreads I had laid out. I generously brushed the slices with olive oil before baking, and they turned out perfectly crispy and delicious. I shared them with my 4 housemates, and they all loved them. However, I actually bought this brand of olive oil to use daily for its health benefits. I drank my first teaspoon today, but will probably graduate to about 1-2 tablespoons. I never thought I'd "drink" olive oil, but it wasn't bad at all, and after reading a lot on the subject, I thought I needed to give it a try. This is a premium olive oil from Morocco that's cold-pressed and rich in polyphenols. Polyphenols offer significant health benefits by reducing chronic inflammation, improving blood pressure and cholesterol, enhancing insulin sensitivity, and protecting against cardiovascular disease, neurodegenerative diseases, and certain cancers. However, not all olive oils are equal. In fact, I read that there are a lot of fraudulent olive oils out there that are mislabeled as extra-virgin even when they're not. A 2010 study conducted by the University of California–Davis Olive Center tested supermarket samples of Extra Virgin Olive Oil and concluded that more than 69% of olive oil labeled “extra virgin” did not meet the legal standard. Who wants fake (heat-treated or refined) olive oil when you can have the real deal? Now, other polyphenol-rich olive oils, including the one promoted by Dr. Gundy, can be VERY EXPENSIVE. Gundry MD Olive Oil is also produced with Moroccan olives and is rich in polyphenols; however, it's 3 times more expensive than this brand. I was looking for a better quality EVOO but I didn't want to spend a huge amount of olive oil. I consume a lot of EVOO and I primarily care about high polyphenol content and price. I did a bunch of research, but I am no olive oil expert. This is what I think: This oil originates from Morocco. Information on polyphenol content isn't available for all brands but I was able to find some numbers of Atlas. I assume it varies, based on olive harvest each year, etc. Either way, I can't test anything myself in a lab but it sounds like Atlas is known to contain high levels of polyphenols. There are certainly brands that have higher levels of polyphenols for people looking for extreme levels but this is considered high by most standards. (Not an expert opinion but based on internet research I have done) The price and packaging are additional items that drew me to this brand. It is a full liter where the wine bottle size, more expensive oils come in .75 liter bottles. The internet suggests finding EVOO with a pressed date on the back. There is a pressed date on EVOO. The bottles that I have purchased from Amazon arrive to me about 3-5 months after the pressed date. You can pay for oils flown over instead of travelling on a ship but it should be good for 12-18 months minimum from the pressed date. If the most premium, most expensive oil is what you are after, this is not it. If you want high polyphenol content, oil with a pressed date, relatively recently harvested oil, good packaging and a good price, is this the best I found. EVOO doesn't expire but the polyphenol content does slowly degrade I guess. I go through it quickly so I don't worry about it. I would rather receive bottles that are harvested less than 3 months ago but I'm not willing to pay for it personally. The oil does have a peppery taste and you do feel it in your throat if you take a tablespoon of it. (which is good and indicates high polyphenol content) It tastes good in my opinion but I don't know if I have tried oils that don't taste good. I also not have a strong preference for a specific taste. I prefer good quality, recently pressed, well packaged oil for a good price. I would recommend shaking it each time you use it. ... show more

I have never been a fan of the taste of olive oil. Frankly it’s always been my last choice. It tasted too much like… well, olives. And not good ones. Old ones. The reported health benefits made it a must addition though. So I went on a tasting journey to find the absolute best. After a few tossable bottles of what can only be described as tacky dust collecting bottles of no thank you ick, I came across the Atlas Cold Pressed (because who likes heat pressed anything but clothes) Extra Virgin (because hey, some of us matured in the 80’s and extra virgin anything is always good) Olive Oil (not the Popeyes girlfriend variety). Atlas I thought, save me. I ordered a bottle, hoping the price was indicative of quality. The bottle arrived after a few short days and right away I knew this one might be different. Gone was the cheap brown paper, replaced by tightly wrapped bubble wrap, cut to have its own bottom padding. I unwrapped it like a special gift, until the final bit of bubble wrap cascaded to the floor. The beautiful dark glass angled bottle shone under the stove lamp. I pulled the black tab and unwrapped the bottle like you would a bottle of wine. I peeled off the lid, and slowly sniffed. I have been fooled at this stage by cheaper brands and didn’t want to make the same nose hair curling mistake again. I sniffed, ever so slightly. I sniffed a little stronger and was delightfully surprised to discover the scent was pure smelling. I poured a little on my finger, and slowly took a miniature tiny taste. Hmmmm what was that? I tasted the rest of the drop. Delicious! It tastes like quality and care. I cook with it, and it handles heat like a champ. I even used it in my hair for a spa soak and the results were luxurious. I am very impressed with this high quality Atlas Olive Oil! It is delicious! Cold pressed, high in polyphenols, Organic. Since I received it, I take 2 tablespoons a day as well as cooking with it. I was purchasing another brand of quality Olive Oil which cost much more. As a senior living on a tight budget, I appreciate the Atlas Company offering such a suburb Olive Oil. I get a little burn at the back of my throat which a high quality olive oil is suppose to do. I am delighted that I fortunately came across this on my search for a more affordable oil.
